So much flavour in this healthy recipe! For anyone trying a Paleo or Ketosis lifestyle nutritional plan try this out! Compliments to the chef! Erin May. FOR THE VINAIGRETTE: * 2 Limes juiced * 2/3 Cup Cilantro... * 2 Clove Garlic * 2 Tbl Honey * 1/2 Cup Avocado Oil, or light oil of your choice * 2 Tbl White Wine Vinegar * 1 tsp Real Salt FOR THE MARINADE: * 1/2 Cup Cilantro * 2 Limes juiced * 2 tsp Coarse Real Salt * 2 Cloves Garlic * 1 tsp Cumin * 1 tsp Chili Powder * 1/4 Cup Olive Oil FOR THE SALAD: * 4 Chicken Breasts cut into strips * 1 Large Yellow Onion peeled and sliced * 1 Large Yellow Bell Pepper, seeds removed, cut into strips * 2-3 heads Romaine Hearts, cut into bit sized pieces * 1 Avocado, sliced * 3/4 Cup Cherry Tomatoes, halved MAKE THE VINAIGRETTE: 1. Place all ingredients in a food processor or blender and blend together until the garlic is well chopped and ingredients have emulsified. 2. Refrigerate dressing. MAKE THE MARINADE: 1. Using the same blender or processor that the vinaigrette was made in (you don't need to wash it out), place all ingredients for the marinade inside and puree until garlic is finely chopped. 2. Pour 1/2 of the marinade into a bowl or Ziploc bag and add chicken to the marinade. 3. 4. Pour the other half of the marinade into another bag or bowl and add the sliced onion and peppers to it. Let marinate overnight or for several hours, if possible. You can also skip letting it marinade and use it immediately. It will still taste great! FOR THE SALAD: 1. Prepare salad plates(or a large bowl) by placing lettuce, avocado sliced, and cherry tomatoes on each plate(or all together in a bowl. 2. Heat a large sauté pan or wok to high. Add the vegetables (do not add the marinade) to the hot pan and cook quickly, tossing with tongs or a spatula until the veggies are still crisp, but golden brown in spots. Remove from pan and keep warm. 3. In the same pan on high heat, add the chicken and marinade to the pan and cook for 2-3 minutes, or until chicken is fully cooked and slightly caramelized. Toss with the vegetables. 4. Top salads with the hot chicken and vegetables. Drizzle with the cilantro lime vinaigrette.

Day 4 of the #22pushupchallenge is complete. I forgot to complete it yesterday so I did 44 push ups today and nominating 2 people! I was nominated by John Willi...am Shurtleff! to do 22 push-ups a day for 22 days to raise awareness for combat veterans. 22 vets a day commit suicide, and this is a small way to raise awareness for that issue in the US. In Canada, there are comparable numbers of men and women suffering from PTSD. Push ups alone wont solve the problem, but this challenge is designed to raise awareness and funds for a very real problem. My nominee for Day 3 and 4 is Grady Scheel and Ben Kelly You start tomorrow!!!! The rules are simple: * Once you are nominated your 22 days start the following day. * Every day you record yourself doing 22 push-ups. Try your best to reach 22. If that means doing assisted (from your knees) push-ups or that you have to stop and take a break that's fine but try to get them all done in one video. * Every day you must nominate a different person. Try to choose people you think will want to do this and/or have the ability to do it. * Nominate a friend, family member or colleague and challenge them to do 22 push ups for 22 days. Each nominee is also encouraged to make a minimum donation of $22.00 and post their videos on social media. Along the way, nominate or encourage others to join the fight. The mission is to raise awareness and funds to support our ill and injured Canadian Armed Forces members, Veterans, First Responders and their families. One suicide is one too many.
