Happy Monday! Here is a photo that got me thinking (a lot) about time, expectations; yours and mine and how the service/hospitality industry has evolved. We do our best everyday, every table, every customer to ensure that you have the best experience possible in our establishment. ... By the evidence of the empty plates coming back to the dish pit for our extremely hard working dish washer to wash we are providing a great food experience!!! But, when faced with a full dining room of hungry consumers I tend to worry if sometimes we are going to hit that goal of a 25 minute bill. Sometimes we can hit 5 minutes and others we have experienced a catastrophe in our open kitchen and have to push the time barrier and our sanity to push thru it. ( ie: exploding eggs in a poach pot when you've got ten eggs benedict in que, LOL) The amount of pressure placed on the front of house staff and also the back of house staff is what keeps us motivated to perform an extremely great job! That's why there are only a select few who can "handle" working in this industry ( but, thats a post for another day) We spend our mornings preparing the freshest ingredients, every day. We don't have a freezer chock full of todays specials or a microwave that will "zap" them in an instant. We cook! We create, we love what we do! To all of our customers, past, present and future, THANK YOU for loving what we do, THANK YOU for enjoying our spectacular food, THANK YOU for your patience and THANK YOU for being part of a food movement that is once again showing people how to sit down and enjoy their meals together.
