Today’s #foodartisanofalberta is a Calgarian who launched a grassroots organization to help victims of domestic and family violence and all with a bowl of soup. Say hello to Sharon Hapton, the CEO of Soup Sisters. Sharon took her entrepreneurial spirit and her love of soup-making and built Soup Sisters National into a successful non-profit that now delivers more than 2.5 million servings of soup to emergency shelters. The Soup Sisters model is such that in cities, groups of ...volunteers organize soup-making events. The events are centred around friends gathered in a kitchen making soup for a good cause. At the end of the night, soup is delivered to organizations helping families in crisis. Within Calgary alone, Soup Sisters delivers to 15 agencies every month. Sharon has been recognized locally and nationally for her work, including one of Chatelaine’s and CityTV’s women of the year, Global TV’s Women on Vision and the Governor General of Canada Award for Meritorious Service. Local Soup Sisters and Broth Bros chapters are gearing up for next week’s annual #SoupItForwardDay. On this day, Canadians are encouraged to share the warmth and kindness that is a cup of soup with someone who needs it. With that in mind, Soup Sisters has launched the Virtual Soup Pot, a series of online cooking classes hosted by celebrity chefs inviting Canadians to cook soup in support of 40 shelters around the country. We are encouraging our community to register for a Virtual Soup Pot class in support of Soup Sisters. For a $49 donation, participants will receive a grocery list, recipe and Zoom link to the event of their choice featuring chefs like Anna Olson and Sarah Britton. On event day, participants will log in and be guided through a delicious soup recipe in real-time by a celebrity chef. For every registration received, Soup Sisters will deliver four pounds of nutritious, comforting soup to a shelter in need. Next Wednesday, March 3, marks National Soup It Forward Day. This is a cross-country celebration to deliver a potful of kindness and nourishment to someone in need. To get in the spirit, Karen is sharing one of her favourite soup recipes on a special #tastythursday, and she discusses her decade-long involvement with Soup Sisters National and Soup It Forward. Follow along with Karen as she walks us through this easy but hardy soup. This is the perfect soup to share with so...meone who needs a ‘hug in a bowl’. Triple S soup (Sausage, Squash and Spinach) Ingredients: * 1T olive oil * An onion, chopped * 1pkg thawed frozen chicken or turkey sausage, cut in slices * c white wine * 28oz canned tomatoes, followed by 2 cans of water * 1t oregano * 1t basil * 1pkg frozen chopped spinach * 1pkg frozen cubed butternut squash * 1can mixed bean medley, small white or black beans * Salt & Pepper to taste Method: 1. Heat a stockpot and add the oil and then the onions sautéing them until they are translucent 2. Add the sausage and let it brown, then add the white wine and scrape the brown bits off the bottom as it deglazes the pan 3. Add all the other ingredients and simmer for about 15 minutes. Add salt & pepper to taste. 4. You know what they say, a balanced diet is chocolate in both hands. So, chocolate lovers, this #tastytuesday is for you. We are sharing Karen’s easy Oreo Candy Cane White Chocolate Bark. This recipe is perfect to add to your holiday baking and is simple enough that even the little hands in your kitchen can help out. Oreo Candy Cane White Chocolate Bark... Time: 1 hour including cooling time Yield: 18 24 pieces Ingredients: 6 candy canes 16 18 mini Oreos 1 lb white chocolate pieces Directions: 1. Crush the candy canes in a thick plastic bag by pounding them with a rolling pin or hammer. Crush the Oreos in the same fashion and set both aside. 2. Place the chocolate in a microwaveable bowl and heat for 3 minutes in a microwave on 50 percent power. Stir any partially melted bits until the chocolate is smooth. 3. Stir both the candy canes and Oreos into the chocolate and then spread it into a 13 x 9-inch baking dish lined with aluminum foil or parchment. 4. Refrigerate for 45 minutes to set, then cut or crack it into shards. The perfect comfort food for today and everyday - Tomato Soup and Grilled Cheese. This is your simple and quick #tastytuesday recipe for today. Homemade Tomato Soup and Grilled Cheese Time: 15 minutes Yield: 4 cups enough for 2 big bowls multiplies with ease... Equipment: Can opener, blender, saucepan Ingredients: * 1 (396 mL 28 oz) can whole tomatoes * cup half and half cream (optional) * 1 teaspoon pesto sauce (or sundried tomato pesto) * 1 teaspoon garlic paste * 1 Tablespoon tomato paste * Salt and Pepper to taste. * Bread slices, butter and your favourite chees Directions: 1. Place the tomatoes in a blender and pulse until smooth. 2. Add the cream (if using), pesto, garlic and tomato paste. 3. Transfer the soup to a saucepan and cook over medium heat until hot enough to serve. 4. Meanwhile, spread 2 pieces of bread with butter, lie one butter side down in a fry pan, lay your favourite kind of cheese slices on it and cover with the other piece of bread (butter side facing up). Cook until brown on both sides. 5. Enjoy the soup seasoned with salt and pepper to taste along with your freshly grilled cheese sandwich.

Here is Karen’s step-by-step guide to the perfect gourmet platter. 1. Start with 3 cheeses - one hard (cheddar, comte, Sylvan Star Gouda, Gruyere, parmesan), one soft (brie, camembert, Neufchatel, Dancing Goats, Noble Meadows or Fairwinds Farm chevre) and one blue cheese (Roquefort, cambozola, gorgonzola, Blue Benedictin, Saint Agur or Stilton). 2. Add something sweet- a little pot of Alberta honey or a Saskatoon berry jam. 3. Sprinkle some nuts - Marcona almonds, candied pecans, spiced cashews. 4. Place some dried fruits - dried cherries or apricots. 5. Lay in some charcuterie - Valbella dried bison, beef, or pork like Sunterra's prosciutto slices, VDG salamis, or a wedge of pâté. 6. Pile in some great bread and crackers. 7. Place a bit of mustard and pickles. 8. Squeeze in vegetables and a dip. 9. Wedge in sliced apples, pears or figs. 10. Ready for a delicious twist for those turkey leftovers? How about curry? Enjoy our Sweet Turkey Curry with a side of couscous or jasmine rice and a crisp chopped salad. Naan bread is also a wonderful accompaniment for soaking up the sauce. One batch will make about 20 servings, so though it might look like a lot of work upfront, it has a great payoff in the end. Tip: Be sure to do all your hunting and gathering of ingredients and cook mise en place (everything in place). ...Happy #TastyTuesday! Sweet Turkey Curry Time: 60 minutes Yield: 20 servings Equipment: knife, cutting board, measuring cups and spoons, can opener, large stockpot Ingredients: 3 Tablespoons of olive oil 3 onions, chopped 4 cloves of garlic, chopped 2 carrots, chopped 2 celery stalks, chopped 1 red pepper, seeded and chopped 6 Tablespoons of flour 2 Tbsps of India curry 1 teaspoon cinnamon 1 teaspoon ground cumin teaspoon ground cloves 6 cups chicken broth 1 cup white wine 1 can of coconut milk 1 cup of tomato sauce cup lime juice cup of mango chutney cup of raisins 6 cups of cooked turkey, diced 4 Granny Smith apples, chopped (save a few for the garnish) plain yogurt and parsley Directions: 1. Heat the oil in a large stockpot on medium heat. Add the onions and cook until softened before adding the garlic, followed by the carrots, celery and red pepper. Cook and stir for about 5 to 10 minutes or until the vegetables are beginning to be tender. 2. Combine the flour, curry, cinnamon, cumin and cloves in a bowl and then add them to the veggie mixture stirring until the vegetables are coated, and the spices are fragrant. 3. Stir in the chicken broth, followed by the white wine, coconut milk, tomato sauce, and lime juice, add them to the veggie mix to make a smooth sauce. Simmer for about 20 minutes. 4. Add mango chutney, raisins, turkey and apples and cook about 15 minutes longer. 5. Garnish with a dollop of plain yogurt, a few diced apple pieces and chopped fresh parsley. #turkeycurry #eatalbertafirst #albertafoodfinder #calgaryfood #recipes

Our #foodartisanfriday features a long-standing Alberta Food Tours partner and Alberta Food Finder game stop - Peasant Cheese. When Peasant Cheese owner Crystal McKenzie was training as a chef, she thought one day she’d open a restaurant, but it was her love of cheese that led her to opening a cheese shop. Training in France and then with several artisans in North America, Crystal tried her hand at cheese making but preferred being a cheesemonger. I enjoyed learning how to ...make cheese but sourcing it and selling it means I can explore new varieties all the time, and in turn, help my patrons discover them as well. Her years of knowledge, experience and success have now led to a second Peasant Cheese location. We are excited to tell all of you that Crystal and her team are expanding into Calgary’s Mission district. In the meantime, pop into Kensington’s Peasant Cheese seven days a week noon to 6 p.m. to get your cheese fix. The shop has a rotating selection of 100 cheeses, including several made in #alberta. They will also prepare cheese and charcuterie boards for a cozy night a home. Inspired by Karen’s friends from Thanksgiving Ranch, today’s #tastytuesday Zippy Apple Cheddar Slice features their Habanero pepper jelly. You can use the hot pepper jelly you love to add zip to the apples and cheddar which are snuggled into a bed of puff pastry. Zippy Apple Cheddar Slice ... * Cook Time: 30 minutes * Total Time: 40 minutes * Yield: 8 10 servings INGREDIENTS: * 1 package puff pastry, thawed * 2 4 Tablespoons hot pepper jelly (we used Habanero Jelly from Thanksgiving Ranch) * 1 2 apples, cored, quartered and thinly sliced * 1 cups sharp cheddar, grated * 2 Tablespoons chopped chives * Freshly ground black pepper to taste. DIRECTIONS: 1. Preheat the oven to 350F and place parchment paper on two baking sheets. 2. Divide the puff pastry into 2 equal pieces and roll them out in oblong shapes, adding a bit of flour to your surface and rolling pin as needed to keep it from sticking. 3. Place the puff pastry on the parchment-lined baking sheets, drop 1 to 2 Tablespoons of the hot pepper jelly on the pastry and use the back of the spoon to spread it evenly. Bake for about 15 minutes or until golden brown. Remove from the oven and let cool a bit. 4. Arrange the apple slices on the pastry, top with the grated cheese and return the pastry to oven and bake for another 10 to 15 minutes or until the cheese is melted and golden brown. 5. Remove from the oven, sprinkle with the chopped chives and a few grinds of pepper. For this Food Artisan Friday we travel to Thanksgiving Ranch (TR) near Pincher Creek, Alberta. On this 3000 acre spread, the Prairie grasslands meet the rolling foothills and rise to look the Rockies square in the face. __ In the family since 1975, owners Christa and Bradley Bustard bought the ranch from her parents in 1998. Bradley grew up helping his parents run their bakery in Pincher Creek from an early age. After becoming an engineer, he left the exec track at ATCO whe...n the chance to takeover TR came because, Christa and I just wanted to take care of the land. We’d seen lots of beautiful places in the world but we realized this place is one of them! AND - we actually had the opportunity to live here! __ The move was not without challenges. Bradley had only ridden a horse 5 times in his life and says, I couldn’t tell a cow from a bull. Now they graze 1600 head of cattle each summer. And, 2 years ago, they opened TR as a working guest ranch. Bradley does all the cooking; Christa is the resident beekeeper. __ Together, they’ve launched the TR brand of condiments. Bustard’s Mustard is a secret family recipe Bradley inherited from his mother. Fat Ass Caramel sauce was named by a friend who said she didn’t care if that was the consequence of eating it. The Habaneros in the Habanero Jelly are inspired by Brad’s long-time patronage at DJ’s stand on 42 Ave SE in Calgary. The Oh Fudge Sauce keeps you from saying something far worse. Ready for a delicious twist for those turkey leftovers? How about curry? Enjoy our Sweet Turkey Curry with a side of couscous or jasmine rice and a crisp chopped salad. Naan bread is also a wonderful accompaniment for soaking up the sauce. One batch will make about 20 servings, so though it might look like a lot of work upfront, it has a great payoff in the end. Tip: Be sure to do all your hunting and gathering of ingredients and cook mise en place (everything in place). ...Happy #TastyTuesday! Sweet Turkey Curry Time: 60 minutes Yield: 20 servings Equipment: knife, cutting board, measuring cups and spoons, can opener, large stockpot Ingredients: 3 Tablespoons of olive oil 3 onions, chopped 4 cloves of garlic, chopped 2 carrots, chopped 2 celery stalks, chopped 1 red pepper, seeded and chopped 6 Tablespoons of flour 2 Tbsps of India curry 1 teaspoon cinnamon 1 teaspoon ground cumin teaspoon ground cloves 6 cups chicken broth 1 cup white wine 1 can of coconut milk 1 cup of tomato sauce cup lime juice cup of mango chutney cup of raisins 6 cups of cooked turkey, diced 4 Granny Smith apples, chopped (save a few for the garnish) plain yogurt and parsley Directions: 1. Heat the oil in a large stockpot on medium heat. Add the onions and cook until softened before adding the garlic, followed by the carrots, celery and red pepper. Cook and stir for about 5 to 10 minutes or until the vegetables are beginning to be tender. 2. Combine the flour, curry, cinnamon, cumin and cloves in a bowl and then add them to the veggie mixture stirring until the vegetables are coated, and the spices are fragrant. 3. Stir in the chicken broth, followed by the white wine, coconut milk, tomato sauce, and lime juice, add them to the veggie mix to make a smooth sauce. Simmer for about 20 minutes. 4. Add mango chutney, raisins, turkey and apples and cook about 15 minutes longer. 5. Say hello to this #foodartisanfriday feature - Lakeland Wild Rice. Owners, Alice and Wayne Ptolemy, have been growing wild rice near Athabasca since 1989. Wild rice is an aquatic grass native to Canada. Surprised? The Ptolemy’s have 1000 acres planted on four lakes. They lease the land from the Department of Forestry and plant the seed annually. They plant spring and fall, and like all farmers, are at the mercy of the weather, but they also need to contend with moose and t...he birds taking their portion of the crops. Each fall, they use a scoop Wayne welded to the front of an airboat to plow the wild rice kernels ashore to the Lakeland team, who then hand scoop it into buckets. The rice is then shipped to the Great Northern Wild Rice company in Manitoba to have the kernels rubbed off and the dried and packaged. Lakeland markets its rice directly to specialty stores and individual customers.
