We were first introduced to the wines of MASSERIA FRATTASI over a decade ago and have loved them ever since. The richly volcanic, high altitude vineyards of Masseria Frattasi are rooted deep in h...istory with their pre-phylloxera roman root stock. Not only do they produce the highest altitude Sauvignon Blanc and Chardonnay in Italy but they are also the only winery to grow the original cultivar of FALANGHINA. Sneak peek at the wine that will be paired with our LA BOTTEGA TAKE HOME MENU this week: Falanghina Taburno DOC - 100% Falanghina Taburno This is Pasquales classic Falanghina named Taburno rightfully after the Mountain on which it grows and the DOC. If this is where Pasquale begins on his Falanghina it hard to believe they get even more expressive and grand. Grown on the extreme slopes of Taburno at approx. 500-600m in altitude. Stainless Steel and bottle deny any trickery on this beautiful bottle. Only 10,000 bottles produced. Think citrus, tropical fruits with aromatic herbs - light, subtle and fresh. Guanciale is made from the jowl cut of pork and is hand-trimmed and hand-rubbed with salt and spice. Its name is derived from guancia (Italian for ‘cheek’). Guanciale is traditionally used in dishes like pasta all’amatriciana and spaghetti alla carbonara. It is a delicacy of central Italy, particularly Umbria and Lazio.
