Farewell 2020!It's been a crazy year to say the least but with all of it there was a lot of kindness and good moments woven right in there. With the holidays and all the extra sweets make sure to create balance and choose nourishing healthy foods that your body can thrive on. . . This Detox soup does just that. Loaded with healthy vegetables and and anti-inflammatory rich spices, this soup will have your body thanking you. . . Happy Monday Beauties!! Never forget how truly magical your are! . . Detox Moroccan Lentil Soup Serves 4 people Prep time 10 mins Cook time 20 mins Ingredients cup chopped cooking onion 1 cup celery chopped 1 cup carrots chopped 2 cups sweet potatoes chopped 1 cups chopped cauliflower cup green or brown lentils 7 cups vegetable broth 1 tbsp olive oil tbsp minced fresh ginger tsp ground turmeric 1 tsp ground cumin tsp ground coriander tsp salt tsp pepper 1.Peel the carrots, onion, and sweet potatoes. Chop the carrots, onion, sweet potatoes, cauliflower florets, and celery into small bite-sized pieces. 2. Peel and mince ginger. 3. Heat a large soup pot on medium heat with 1 tbsp oil, or sub for water. Add in onions and sauté until lightly browned on the edges, stirring often. 4. Add in the rest of your vegetables, along with your lentils, turmeric, cumin, coriander, salt, pepper, and ginger. Saute for 1 minute, and then add in your vegetable broth. 5. Bring heat up to high and let the soup come to a boil. Reduce to simmer. And let simmer uncovered for 18-20 minutes or until vegetables are soft. You can add a cup of water or vegetable stock if your soup is too thick. 6.
