Throughout the summer our house fills with the bright colour and soothing smells of flowers grown in our gardens. The act and art of cultivating them and curating the arrangements is one of the highlights of my summer season each year. Our holiday boxes are a great way for me to tap into this creativity in the winter months. I am excited to announce that this year's holiday boxes will be available for purchase on our website at 5:00pm on Wednesday, Nov 18th. We will have... a limited supply, but a few more than last year to ensure we fill your freezers while also crossing a few items off your holiday shopping list. The link to purchase will be posted on our instagram, as well as on our Facebook. The box can also be found via our website on the 'products' page as of Wednesday at 5pm. This box is perfect for the holidays as you can spoil both yourself and a loved one. You will receive two packages, one filled with our delicious pastured pork, the other gift wrapped and decorated with dried flowers from our garden. We’ve been chatting with lots of folks on the phone lately about cutting orders! To put a face to the voice here we are! Pigs are starting to go in with some of our customers already enjoying full freezers! Our pork will be processed throughout the next month so if you haven’t heard from us you will soon:) . . The benefit of ordering a half our whole animal is that we can work with you to get the animals processed to your liking and needs. Some options include: -how many cut...s you want in each pack -pork loins or pork chops -pork belly, bacon or peppered bacon -ground or sausage (our favourite is chorizo!) -fat for lard -feet for a rich broth -cuts and roasts to your thickness and size liking -hams cut small for a family or large for a Christmas dinner -and more! How long we rest a paddock depends on a variety of factors including plant types, time of year, fertility of the pasture, how much the paddock was grazed previously etc. We are working on finding that sweet spot to provide not only exceptional food now for our cattle, but also to stay in line with our long-term plan to increase our soil fertility, water holding capacity, carbon storage, and of course cow food. This particular paddock we find bounces back quite quickly, i...t took about 40 days to see great regrowth. This year's pigs are looking great. Through the summer, they have been rotating through different pastures teeming with lush greens including forage turnips, sugar beets, kale, millet, clover and grasses (as seen here). We have chosen this forage mix as plants with tubers like the turnips and beets reach down deep in the soil and draw up nutrients. The pigs come along and eat some of the greens and tubers, but leave and trample much of it into the soil. This is then combined ...with their manure adding rich organic matter to our soil. Why is this so great? It allows us to forgo the use of chemical fertilizer and most importantly increases the water holding capacity of our soil. This area of the farm is where cattle have been fed bales of hay in past winters.The lush forage seen here is a result of the manure and ‘waste’ hay that has been deposited from this bale grazing process. For the soil in these areas, it gives a necessary boost in organic matter and nutrients without using synthetic fertilizers to crank out more beautiful forage for our animals. For us as farmers, it reduces our labour and fuel costs as we don’t have to use a tractor t...o feed in the winter and haul manure in the summer. We will just have to move portable electric fences to give our cattle access to that weeks hay supply. We just moved the pigs on to their next pasture. This move required them to travel through a haphazard collection of wooden chutes, fencing and bins directing them in the right direction Amazingly we had no pig escapes! A couple stragglers that love to run the opposite way of course- so you have to get creative, but all-in-all a successful journey. We’ve been getting lots of questions about our 2020 pork and beef availability so here’s the update! *Our beef for 2020 is sold out*. We just want to pass on a big thank you to our community for supporting local and committing early to our grass-fed beef through your deposit in the spring. That money has helped finance our growing season as well as purchasing cattle for next year. This year's cattle are looking amazing. Although it has been quite a dry year, our rotationa...l grazing strategy has paid off. In short, we put all of our cattle on a small amount of land at a time. They eat most of the vegetation, trample the rest and are quickly moved on to the next paddock. This trampled grass and manure improves our soils water holding capacity and organic matter content allowing for more forage to grow in future seasons. It also means tasty grass fed beef as our cattle are always eating the new growth coming from each plant. Our pork: *We have just a few sides/whole animals left.* Again, a big thank you to everyone who has reached out for meat. The pigs are currently out on pasture and have enjoyed all the rain these past few days. It has left some epic mud bath puddles that they are taking full advantage of. In 2017 we bought our farm. Part way through the process of purchasing our property Jon was headed out to guide a rafting trip in Quebec. Before he left I asked him ‘this is for sure what you want!?’. The next time we Skyped I was wearing overalls and a straw hat. ‘We’re farmers baby!’. What a leap of faith.
