Thanks to Speerville Flour Mill for the Christmas present: a 25kg bag of a test blend of whole grain Walton wheat and Carberry wheat, yielding a smoother, slightly sweeter version of our whole white sourdough today. The key key metrics are unchanged: superb toastability and maximum butter absorbency. Come on over! Boy howdy! It's all kinds of January out there! Come on over to draw some metaphorical parallels between time and bread. Spoiler alert, the crust is the best part. As an aside, we've decided to tear up the tracks on the Sourdough Express Railroad. Turns out a high speed train was less practical than planned for connecting a community of 30 houses. Naturally, the train will be replaced by crushed gingerbread multi-use recreational trail. If you've built a house on the developm...ent site, you're warmly encouraged to come collect your domecile.
