Meridian Meats & Meridian Farm Market 02.11.2020

It’s fall - time to bring on the comfort meals! Instant pot Chuck Roast - easy to make and absolutely delicious!! Our 100% grassfed chuck roast are also on special for $7.48lb this week! One pan meals are the best! This recipe can also be done in a slow cooker on high for 5-6 hours. Ingredients... 3lb meridian Grassfed beef chuck roast 5 large carrots cut in thick chunks 5 large potatoes cut in quarters (if you suing small potatoes keep them whole) 1 onion quartered 2 sprigs rosemary 1/4 cup horseradish (will not make the roast spicy!) 2 teas garlic powder 2 teas onion powder 2 teas paprika 1 teas salt 1/2 teas pepper 4 cups beef broth 1 Tbls olive oil Directions 1) leave roast at room temp for 1 hour before cooking 2) mix spices together in small dish and rub all over roast 3) heat instant pot on saute mode - when it says hot add olive oil then sear the roast on all sides - you can also do this in a frying pan 4) remove roast and add beef broth - scrape the roast bits off the bottom of the dish with a wooded spoon 5) add roast to pot and coat the top of the roast with horseradish 6) add potatoes, onions and carrots around the roast, place the rosemary in the pot 7) seal the lid and cook on high for 60 minutes - allow to instant pot to slow release for 10 minutes before quick releasing the remaining pressure 8 remove veggies to serving plate then remove the roast and slice, shred or cut into large chunks 9) return the meat to the broth and serve from the pot with some of the juice!

Winter tea recipe! Great for cold season, or just a soothing cup of tea!! 2 lemons washed well and sliced thin 2 inch chunks ginger sliced thin 1 cup of honey... Place lemon and ginger slices in a large jar Slowly pour a cup of honey over the lemon and ginger and refrigerate To make tea - take a spoonful and add to a mug, pour boiling water over it and mix well. Keep in the fridge for up to 3 months

Our guacamole recipe is perfect for this Halloween pumpkin!! Guacamole 2-3 avocado 1/2 lime squeezed... 1/4 red onion diced 1/2 jalapeno finely diced 1 tomato diced 1/4 cup cilantro finely chopped 1/4 cup sour cream 1/2 tsp cumin salt & pepper to taste Mash up avocado and add all ingredients. Mix just until all ingredients are mixed in. If you don’t like one of the ingredients (or don’t have it) you can omit! The only two necessary ingredients are avocado and lime juice!! Be creative with your spices too, chili seasoning, taco seasoning and garlic powder are all yummy additions See more

We have a fun and tasty meal perfect for Halloween! DINNER IN A PUMPKIN: * 2 Small round pumpkins (or 1 medium) * 2 lbs Meridian Grassfed extra lean ground beef... * 1 medium onion diced * 3 celery stalks diced * 2 cloves of garlic minced * cup soy sauce * 3 Tbsp Brown Sugar * 3-4 cups cooked rice * 2 10.75 cans cream of chicken soup (can use cream of celery or mushroom) 1. Preheat oven to 350F (175C) In a large skillet saute onions, garlic and celery in vegetable oil until tender. 2. Add meat and brown. Drain drippings from pan 3. Add soy sauce, brown sugar and soup. Simmer over low for 5 minutes, stirring occasionally. 4. Add cooked rice and stir to mix well. 5. Spoon mixture into cleaned pumpkin shell. Replace the pumpkin top and place entire pumpkin, with filling, on a baking sheet. 6. Bake 1 hour or until inside meat of the pumpkin is fork tender. 7. Remove pumpkin lid and serve, be sure to scoop out pumpkin along with meat.

What started as a seasonal hay wagon in 1...992, has grown to a year ’round 11,000 square foot market. As Ralph's Farm Market grows, you can continue to enjoy Ralph's fresh Okanagan produce and look forward to Ralph's blueberries & Murray's corn grown right beside our market. Although Ralph has retired from retail, he is still busy connecting us to fresh Okanagan produce & tending to his blueberry field. Over 30 years ago Meridian Meats & Seafood started as an old fashion style neighbourhood butcher shop, small in size but big in character, complete with sawdust covered floors, sides of dry aged-beef, and a 50ft. full-service fresh meat display counter. Don’t throw out your pumpkin seeds ~ roast em up with this easy and tasty recipe! Ingredients 2 cups pumpkin seeds 3 Tbls melted butter... 1 tsp seasoning salt 1 tsp garlic powder 4 tsp Worcestershire sauce Directions 1) rinse pumpkin seeds 2) let them sit out to dry 3) mix all ingredients and add pumpkin seeds 4) spread evenly on baking sheet 5) bake for 1 hour at 275 ~ stirring every 15 minutes 6) pumpkin seeds are roasted when they are lightly browned and crispy 7) empty seeds onto a paper towel to absorb any leftover grease ~ Enjoy!

This is the perfect harvest season dish made with local apples and yams! It is easy to make and goes with almost any meal. Baked Apple & Yams 2 yams unpeeled sliced 1/8 thick 4 apples (Granny Smith are delicious) peeled and cut in half with core removed and sliced 1/8 thick... 1/2 cup butter melted 1/2 cup brown sugar 1/4 cup maple syrup 2 teas cinnamon * optional add ins are raisins and pecans! Directions 1) Slice yams 1/8 thick (no need to peel, the peels are full of nutrients!) 2) Peel apples and cut in half. Remove the core and slice apples 1/8 thick . 3) Line a baking dish with tinfoil and spray with non stick spray. 4) Add yams and apples alternating back and forth 5) Melt butter and mix all the remaining ingredients together. Slowly pour over apples and yams allowing it to run between the layers. 6) Bake at 375 covered for approx 1 hour - until yams are very soft. Remove foil for last 15 minutes to allow it to crisp up on the edges. 7) Spoon the sauce over the yams half way through baking and again when it is finished! Enjoy.

Everyday Meatloaf!! It is easy to make and tastes delicious! Takes less then 10 minutes to whip up and about an hour to bake. Recipe can easily be doubled Ingredients... 1 lb of Meridian Grassfed ground beef 1 egg 1 cup finely chopped onion 1/2 cup milk 3/4 cup dry bread crumbs 1 Tbls Worcestershire 2 Tbls ketchup 1 teas granulated garlic Salt & Peoper to taste Topping 1/3 cup ketchup 2 Tbls brown sugar 1 Tbls mustard Directions 1) Preheat oven to 350 degrees 2) in a large bowl combine everything (except the topping ingredients) mix together but don’t over mix or the texture will not be good. 3) once combined place the ground beef mixture into a lightly greased loaf pan or form into the shape of a loaf on a greased baking pan. 4) In a separate bowl combine ketchup, mustard and brown sugar, mix well. Pour topping mixture over the meatloaf and spread to coat the top. 5) Bake at 350 for approx an hour or until the middle of the meatloaf reaches 175. 6)Remove from oven and let sit for 5 minutes before serving. Goes great with mashed potatoes! See more
