Carrot Ginger Soup Carrot Ginger Soup Use both the roots and carrot greens for this creamy soup. To prepare:... Add 10 scrubbed and chopped carrots, 1 small knob of peeled ginger, 4 cloves garlic, chopped onion and 3 cups vegetable stock to an instant pot. Cook on high for 10 minutes and natural release. Puree until smooth in a food processor or blender and season to taste with salt and pepper, adding a bit of water to achieve desired consistency. For the gremolata combine 1 cup washed and dried carrot tops, cup roasted pistachios, zest and juice of 1 lemon, 1 clove garlic, salt and pepper in a food processor and pulse until finely chopped. Slowly add a few tablespoons olive oil and then transfer to a bowl. Stir in a bit more oil and 1 Tbs sesame seeds. Top soup with a good dollop of gremolata. See more

Kung Pao Brussels Sprouts Kung Pao Brussels Sprouts Kung Pao Brussels Sprouts bring the flavor! To prepare: Halve and roast Brussels sprouts at 425 degrees for 20 minutes or until crispy and tender. In a skillet sauté 2 cloves minced garlic in 1 tbs sesame oil for 1 minute or until fragrant. Add 1/3 cup soy sauce, 1 tsp rice vinegar, 1 Tbs hoisin and 2 tsp chili garlic sauce and bring to a boil for 1 minute to thicken slightly. Add roasted Brussels sprouts and cook for 2 minutes, stiring constantly, to caramelize and coat well. Serve over rice with sesame seeds and sliced scallions.
