If you haven't already noticed, we're a bit obsessed with Canadian mushrooms! These tasty and nutritious gifts from nature have a lot going for them... They are packed with umami, meaning they enhance all the flavours of food they are served with! Neat party trick, right? They are a super (duper) food! Rich in vitamins, minerals and antioxidants, mushrooms are a healthy choice. They are sooooo easy to cook! Simply saute and add to your favourite meals: pasta, chili, bur...gers, nachos, soup, frittatas... the list goes on! Do we have you convinced? Admit it, you're a bit obsessed now too!

We have a guest in our kitchen! Today Alisa of The Delicious Spoon is sharing her Gouda & Honey Mushroom Tarts! These tarts are quick and easy to pull together using store-bought puff pastry. Filled with a savoury mixture of mushrooms, onions, garlic and Gouda, it's hard to make these hand-held morsels any better... but then, BAM! Hit them with a drizzle of honey. Question: Can fresh mushrooms be frozen? Answer: YES, however, it's best you cook or sauté the mushrooms before freezing. Since mushrooms are over 90% water, traditional freezing processes can ruin their texture, meaning they will be watery and soggy when thawed. Sautéeing mushrooms before freezing helps to maintain their taste and texture as cooking reduces their water content! When you are ready to use your frozen mushrooms just add them directly to your chilis, soups, stews or casseroles and continue to heat until warmed through. Enjoy!
