With lighter notes than it's cousin Harvest Moon, we recommend making a long first steep (60"); once the tea awakens, however, it releases its flavour much faster. This is: a modern style young Pu Er, with the depth and uplifting energy of old tree teas but the lightness and sweetness that appeals to a young generation in China. . This is not: an old school Pu Er, with notes of camphor and Chinese medicine. It is conveniently pressed, with ’slices’ that make it easy to break the right portion for a 100ml - 120ml gaiwan. .. Here's a look at what to expect while drinking this tea: . 1st Steep: the first impression on the nose is similar to that of spring conifer tips; it has the lemony feel of fir tips and thefreshness of cedar sap. The infusion is light yellow. . 2nd Steep: this infusion has the colour of clover honey; it is richer, with notes of pine resin (in a pleasant way). Light astringency. . 3rd Steep: notes ofcedar wood become stronger; it is mouth-watering, and there is 'gan'. Bitterness followed by sweetness. After a few seconds, while breathing, a floral aftertaste appears. . 4th Steep: minerality; alkaline notes overlay with the cedar wood aromas. . 5th Steep: a new variety offorestnotes pops out; this time, it is moss & lichen. A long, lingering sweetness remains on thesides and tip of the tongue, as well as the palate. ... The stone pressed tea cakes is loosely pressed, which enables it to breath and age gracefully. Wazuka Tea Festival, 2020. Limited Edition - Tanaka Yohei Sencha . This tea is part of a limited edition line that we launched to celebrate 'Teatopia', the annual tea festival celebrated in Wazuka (Kyoto), one of the most revered origins for tea in Japan. .... This tea, in the words of Tanaka Yohei. . Harvest date: May 12. . About this tea: The plantation where this tea was harvested is particularly for gifting to my family and friends. Since I do not have to calculate the cost and other things, I can express my passion in this tea without any constraint. I have the luxury of fertilizing the land in the best way I believe and harvesting on the day that I think is the best. Something unique about Seiwa-en is what is called ""the aroma of fire ( hika)"" (comes from the drying process). Our tea is known for having a strong aroma of the fire. In order to achieve this, we have been forcusing on enriching the soil since this aroma can only be achieved with enough nutrients from the soil." . About the harvest this year: "It was the most difficult year in recent 10 years to be honest because of the abnormal climate.I felt that all the theories that we have accumulated did not apply at all, and that is why I was able to pour even more thoughts into growing our tea. I am very happy with the tea that I am sending you." . Grower's message to tea drinkers in North America: 2020 has been a difficult year for a lot of people, and it is the same for tea farmers. However, we will continue to make an effort in producing quality teas from Wazuka. I hope you can have a moment to pause and relax, appreciate what's around you with a cup of tea from us. . Grower's brewing suggestions: Any temperature you like from 100 to cold-brew. (I think the best way is "umadashi", brew it with 50-65 for 1-2min). . H2 Matcha | Oct. 25. . Today we milled some Uji Hikari tencha from Yoshida San. Before milling, we warmed the tencha lightly in a horuku, with the objective of coaxing a new flavour of this tea that we thoroughly enjoy. We’re happy. The vibrancy of the Uji H cultivar remains, but a silkier (cashew nut) finish makes this latest batch very enjoyable, at 9pm, on Sunday. .... NEW. Traditional Yame Hon Gyokuro, by Oishi San. . This is the second batch of Traditional Authentic Yame Gyokuro that we select from Oishi San, in Yame. These beautiful fine needles, infused with water under 55 Celsius, reveal an umami-intense nectar with notes of ponderosa pine and kabocha (squash). . Having just landed at our tea bar, we have not yet tried a mizudashi (ice) infusion with this tea... but we'll report on that soon.... . Oishi San produced this tea following the rules for Traditional Yame Hon Gyokuro (Geographical Indication), which include: covering the tea trees with a canopy of straw for at least 16 days, picking exclusively by hand and using no artificial fertilizers or pesticides. . #yamesencha #Yamecha #teahistory #YameTea # # #
