Today I am reaching out to all our customers to say THANK YOU. We are so grateful for your support through these challenging times. I particularly want to reach out to our Mahogany customers today and acknowledge that we have been having some baking issues in our South location. Over the last month or so I have heard from some of you about some sub-par pies and concerns around changes. We truly appreciate your reaching out and telling us of your product issues. As a resul...t, we have undertaken a number of changes internally from additional staff training to equipment modifications in order ensure we produce to the high standards we are known for. You have our word @piejunkieyyc that we are committed to making the best pie possible. To those of you who have had a less than stellar pie recently, let us know. Please call the Mahogany store and explain your issue and our staff will make it right. We are a small, locally owned business, and we rely on our customers to spread the good word about our pies. So thrilled to tell you about the first of 4 ice cream pies we are making to celebrate the sunny spring-summer season. This eye-catching frozen beauty was created With everyone's inner child in mind and is so new, we are still working on its name. For now, let's call it the Ice cream brownie salted caramel pie. We are open to name suggestions, so to help get your creative branding juices flowing, let me tell you all about it. We start with our freshly baked all-butter past...ry shell painted with a layer of Callebaut chocolate to keep the pastry crisps and flaky. Then we add our vanilla ice cream loaded with chunks of our homemade brownies, bananas and caramel sauce. Then we topped it with fresh whipped cream and to add some colourful bling, more brownie chunks, smarties and mini marshmallows. I have to tell you the testing and tasting of this year's frozen lineup has been some of my favourite work this year. Sadly it is not the hot sunny May Long weekend we had hoped to launch in, but don't let that stop you. This ice cream pie is going to be a colossal hit, no matter the temperature. This is a quick snap of the tiny plum tree in my backyard covered in flowers. I'm so excited to see this tree in full bloom. It is now seven years old and finally thriving. I planted it with my son Jack in the loving memory of a very young friend who passed away. She was an beautiful, kind and simply amazing young woman with her world just starting to blossom. We planted this tree at our cabin where we had so many wonderful memories together and babied it for years, but it j...ust hung on. Two years ago, I bit the bullet dug it up, and brought it home to Calgary. I can't tell you how relieved I am to see it growing and covered in blossoms. One day dear Zoe, I will make a pie with plums from your tree and teach my children to do the same, so you will live on in all the places and hearts that love and you. I plant trees for those I miss and find a wonderful sense of them with me again in spring. Do you plant trees for lost love ones?

It’s that time of year again when we make our goat cheese and tomato tart. A blend of goat cheese from @dancinggoatsfarm ricotta fresh herbs. We top each tart with marinated cherry tomatoes in a blend of fresh Oregano, basil and parsley, sea salt and cracked pepper. I serve mine at room temperature on a warm day like today with an arugula salad halved as an appetizer, but when there is no company, I eat the whole thing. (a good thing about Covid) This traditional Italian fam...ily recipe speaks summer to me. It’s excellent also warmed on a cold summer evening as well with a little grilled veg. Steak and Mushroom pie with mashed potatoe’s and gravy. Peas and some pickled onions. Hardy home cooking post snowshoeing. With little effort as I used Christmas days gravy and leftover mash. Love the laziness of the holidays.

Mocha chocolate ganache with salted caramel sauce. This silky chocolate treat will not be allowed in my house again for a very long time. With no regard for my need for sleep, it continued to call and call to me, even in the wee hours of the morning, and before I knew what was happening, I ate it. Omg, we make good pie. I do hope others over-indulged that a Thanksgiving weekend? I know I did.

Salted Honeypie. When the trees bare no more fruit, when the harvest is over, and frost provides the seasons colour, there is still honey. This all-season pie to me, however, tastes of autumn. The cross between creme Brulee and my mother's butter tart transports me to fall in Guelph, Ontario, growing up in the ’70s and ’80s, my mother's butter tarts and the golden light and leaves. If you have not tried this pie, you are missing one wonderful dessert this Thanksgiving weekend.

The colours of autumn in my garden last evening, along with the glorious light from the chinook sky, are just two reasons to be thankful. Another is our fantastic team of pie makers, bakers and front of house servers. They work such long crazy days at thanksgiving and with such great team spirit. I'm so very grateful for all they do. As a small business owner, I am always grateful for the messages I receive. The positive and those that are upsetting. We take each and every message seriously and personally. This is my dream and how I, my partner and our wonderful staff feed their families. This is not a job you can do well without great passion, caring, strong legs and back. I try to answer every single private message and comment promptly because I know we are lucky to have you supporting us. You have pointed out bakers challenged by the very fickle timing, allowing us to do more intensive training around new menu launches, and in some cases, we have to tweak our recipes. Times are hard, and COVID has added a layer to every move we all make, but with your help, we are making improvements all the time. At this crazy time of year, Thanksgiving that I reflect on my tiny three-person opening just five years ago. I can't help but be grateful and in awe. Thank you to those who road out the early growing pains, and those who shared family recipes and memories that our pie invoked. It is those memories, old and new, that kept us going.
