What does 'ceremonial matcha' mean, anyway? It is a myth that there is an official grading system in place for matcha. In fact, there probably should be. There is certainly a wide range in quality, and labels are murky at best. The traditional matcha ceremony is a very important part of the tea culture of Japan, and is a fully immersive experience. From the design on the matcha bowls, to the ritual, to the art on the wall, to the floral arrangement in the room, to the kimono ...and sweets that the host has selected for the season, no detail is overlooked. A matcha ceremony host will always want to offer the very best matcha they can find to their guests. Usually that is a matcha made from first flush tencha leaves (perhaps with some summer harvest tencha blended in for balance) and it is likely a smooth, umami - rich flavour experience with a deep green colour. It was likely stone - ground slowly, to preserve flavour and quality. It may or may not be organic (likely not), and it might have been produced anywhere in Japan. (Most commonly in Uji, but see note above re: origin) 'Ceremonial matcha' has become a powerful marketing tool for tea sellers outside of Japan. It can be confusing for consumers, as in our experience, some matcha on retail shelves that would be considered 'mid - grade' in Japan are labelled in this way. The easiest way to boil it down is to qualify 'ceremonial' as: Matcha of Japanese origin (many matchas on the market are produced in China, for instance) Spring harvest, or a combination of spring + summer harvest (not fall) Smooth flavour, deep green, minimally bitter Ground from properly finished tencha - not other teas such as sencha 'Suitable for serving guests' (which is of course highly subjective) Our Premium Ceremonial Matcha ticks all of these boxes, and is also certified organic and delivered directly to us several times per year. It's Honey Chai time! One of our absolute favourites for fall - this very special infusion literally saves the bees with every serving. First we grind spices fresh from whole according to our secret recipe which includes cinnamon, ginger, cardamom, peppercorn, nutmeg and clove. Then we blend in premium black tea leaves... and gently heat up some honey from our friends at the Toronto Bee Rescue. ... The dry mix of spice and tea then gets placed in our specially retrofitted cement mixer and the warm honey is poured in. The result is our gorgeous and sticky Honey Chai - the perfect infusion for colder months. The Toronto Bee Rescue re-homes swarms of bees at risk of extermination and relocates them to hives in the Greenbelt. Tea storage tips! (...and a question for our tea loving friends...) Your prized tea collection has three enemies in this world: 1. Light. Store teas in an opaque package, or store clear jars of tea in a closed cupboard. Light deteriorates the freshness of tea rapidly.... 2. Moisture. Tea leaves are dried to around 3% humidity in the production process. If left in a humid environment, they will expand, absorb, and can get musty. Not delicious. 3. Scents. Tea will pick up scents around it (which is why it is so easy to blend and flavour) so keep it clear of strong smells by using a tightly sealed container. No one wants garlic tea! Question for our friends - these jars were made exclusively for our office tea program, but stack beautifully for tea storage at home. Should we make them available for everyone in our online shop? Eight years ago, I started Pluck Tea with a vision to ‘fix restaurant tea.’ Armed with a credit card, $5000 that I had saved up from my job selling office furniture, a freshly minted Tea Sommelier Certificate, and my mom’s hand me down hatchback, my early Pluck days were spent meeting with chefs, bartenders and baristas, visiting local farms and food makers, and blending teas with local ingredients at my kitchen table for delivery the next day. Once we had confidence t...hat I was on to something (this tea company idea may just work!) my family put it all on the line. We sold our house, rented an apartment around the corner, and went ‘all in’ with my husband’s income carrying our family expenses including those of our three kids. As the company grew over the years, Pluck Tea added dozens and eventually hundreds of new restaurant customers (including those of several top chefs across Canada), office customers, and select retailers. We won some prestigious industry awards, invested in a gorgeous, light filled production facility in the GTA (that we are still operating in today), and built an incredible team of eight awesome full time employees. Every dollar we earned was reinvested into building our vision of the bravest and boldest tea company in the world. And then COVID happened. In a matter of days, the foundation of the business simply evaporated. The restaurants we relied on were shut. If they weren’t closed, they were offering takeout or delivery only, but tea isn’t an ideal takeout or delivery option. (Unless you’re one of the big guys.) Unfortunately, as a result of declining sales we had to lay off half our staff, and reduce hours for those who remained. The definition of Pluck: noun ‘Spirited and determined courage.’ The past several months have been truly transformational. Our team has dug in, rethought, reimagined, and rebuilt. Is it PSL season already? Here's a 100% natural Pumpkin Spice tea latte alternative to the flavour, oil, and syrup laden options out there. Super easy to make at home, and will leave you feeling cozy, comfy, and virtuous. Recipe: ... (Makes two cups) 1. Steep one cup of our Honey Chai, East Coast Chai, or Masala Chai double strong. (Use 2 tea bags, or two teaspoons of loose tea.) 2. In a small pot or milk frother, heat one cup milk of your choice. (We love oat or almond in place of dairy for this recipe) 3. Crack open a can of pumpkin puree - which seems to be everywhere this time of year. (Baking aisle) We used the puree, not the canned pie mix which includes sugar and spice. If you do end up using the pie mix, you will have a spicier, sweeter end result. The choice is yours! Add two teaspoons of pumpkin puree to the milk, and whisk until frothy and hot. Divide tea into two mugs, and pour hot pumpkin infused milk to the top. Sweeten to taste. Finish with a sprinkle of cinnamon or nutmeg.
