Life is Only as Good as Your Mindset . . . .... Think you can? Amazing! You can! Think you can't? Alright, then you can't Ya know, there's so much talk about mindset, but it's simple. What you believe, you achieve. Believe you are going to crush it in your business this month and have a freaking blast doing it? That's what you'll achieve! Stuck believing that it's too hard for you, that you aren't good enough, that you don't have what it takes? ...you know the outcome. But here's the thing, we're not even going to focus on the latter option, because we don't have the TIME or SPACE for those negative thoughts! See what I did there? I made a conscious choice to choose the positive, to see the good, to believe in the amazing possibilities! And you can do that too, because while you can't control everyone or everything (hellloo 2020 teaching us this lesson), you absolutely, 100% CAN control YOUR MINDSET. Cauliflower Nachos... Yay or Nah? Am I crazy or does that sound yummy to you too? Posted the recipe below for you to save it and let me know you think!... Ingredients: 1 medium head cauliflower cut into florets 2 tsp. olive oil tsp. ground cumin tsp. sea salt or Himalayan salt tsp. chili powder tsp. garlic powder cup shredded Monterey jack or pepper jack cheese cup chopped tomato cup chopped red onion cup chopped orange bell pepper 1 medium jalapeño seeds and veins removed (optional), sliced (can add a second if desired) cup mashed avocado 2 Tbsp. finely chopped cilantro Instructions: 1. Preheat oven to 425 F. 2. Place cauliflower on baking sheet. Drizzle with oil. 3. Sprinkle with cumin, salt, chili powder, and garlic powder; toss gently to blend. Spread evenly on baking sheet. 4. Bake for 30 to 35 minutes, or until tender-crisp and golden. 5. Top evenly with cheese. Bake for 3 to 5 minutes, or until cheese is melted. 6. Top evenly with tomato, onion, bell pepper, jalapeños, avocado, and cilantro; serve immediately.
