Covid = Creativity Looking back at the last twelve months as we approach this weekend’s fifth anniversary for Shokunin, the biggest impression we are left with is one of inspiration quickly followed by the importance of collaboration with those who help fuel that inspiration. That collaboration comes from both inside and outside of our restaurant. Working with our own team but also opening the conversation to those who are pushing with equal determination to navigate the Cov...id landscape in our community. Our Anniversay Otoso Tonkotsu Ramen, born out of a need to celebrate our fifth anniversary due to continued restaurant closures, is a tribute to these lessons of inspiration and collaboration. The broth was inspired by a collaboration between @ChefDarrenMacLean and Chef @mitsuru_hara who innovated the otherwise extremely rich tonkotsu broth by utilizing sake kasu, offering an acidity and balance. The handmade noodles represent our collaboration with @shikimenya as a way to celebrate and recognize their incredible commitment to artisan-crafted noodles. This is the ramen, complete with a litany of reimagined garnishes, that we are excited to announce will be featured on our NEW MENU that is waiting for you upon our reopening! A menu that has been inspired by opening our minds when Covid forced us to close doors. While this is the first glimpse into our new menu, this same inspiration and innovation is being celebrated across all of our restaurants and we cannot wait to share each new dish with you again, in person. *IMPORTANT ANNOUNCEMENT* . A valued and trusted team member at our sister restaurant NUPO worked Thursday, October 1 while feeling healthy, but woke up the next day with mild symptoms. The individual quickly notified our team and began self-isolating and received testing. On Monday, October 5, this person immediately disclosed a positive test result for COVID-19. . As an act of solidarity with @nupoyyc and as an additional precaution to protect both our team and you, our gues...ts, we will be voluntarily closing Shokunin until October 15t while our team members self-isolate and receive testing. Upon reopening, you can be assured that all working employees have received negative test results and that the restaurant has received an additional deep sanitization. . While no members at Shokunin have reported positive for COVID-19, and we are staying positive that our protective measures will help this to continue, we do have a small number of employees who do assist at both locations. The employee who tested positive does not work at Shokunin but until we have confirmation that the shared employee tests return negative, we have chosen to do what we feel is right for our staff and for our community. . We ask that this be a reminder to us all that our due diligence is to keep one another safe and be proactive in how we interact with one another and where ever we may find ourselves. . We will continue to utilize our Self-Assessment Questionnaires for both staff and guests upon arrival at our restaurant and are proud to share that this was a huge reason why our team was able to respond quickly and with a clear understanding of what steps were to be taken. .
