It takes 3-4 years before a coffee tree is mature enough to bear fruit. The berries are then picked at their ruby red peak ripeness, hulled, dried, sorted and graded, before they can be shipped from the ‘coffee belt’ to roasters like us all over the world. At To Bean or Not to Bean, we work with OPTCO - an organic trading company who have a small group of staff who visit the farms we source our coffee from to ensure the farmers are being paid a fair wage, and that organic pra...ctises are consistent. We source coffee from 7 different countries (The soil in which they’re grown has a lot to do with a coffee’s flavour notes) and roast them fresh every week to 5 different roast levels in hopes of giving our best to the final chapter of your coffee. Here’s my off duty Blair. We adopted Duke 2 December’s ago... he was found caked in 5lbs of mud on the side of a hwy in Kentucky - 35lbs at the time. A vet encouraged a full of heart human - Kim Mace-Kearns - from Niagara to put him down, but she advocated for him... and we’re just so grateful. He’s come such a long way... being traumatized outside, it took him nearly half a year to feel safe enough to go to the bathroom outside. We’d walk literally for hours sometimes and... he’d hold it until he was back safe in the house. We built a ramp as his depth perception isn’t great, so he doesn’t do stairs well. He uses his legs a bit like a walking stick... we’re not sure how much he sees but his sense of smell is certainly in tact. Having suffered trauma to the head, it takes his brain some time to switch gears so starting a walk is typically at a snails pace (we should try coffee) He growls deep to express his happy, inserts himself against our legs or over our shoulder to cuddle everyday, and he might be one of the sweetest 4-legged souls we’ve adopted in our twenty years together. Love and attention they say, makes all things grow. It wasn’t always easy, but Duke is honestly one of the best decisions we’ve ever made. Joe retired from Cooper standard when he was 60, and has come to the rescue of a whole lotta folks since then - even making his own tools for chimney cleaning and repair. The light caught this flock of seagulls and stopped me in my tracks as I left the grocery store last night. It went on for at least a minute. The inverted Aeropress method - my everyday go-to brew. The same coffee can taste totally different depending on the way you brew. But for me, brewing at home, work or traveling, this is my go to. Ill never forget the first day I tried it (remember that Paul Roberts?!) knocked my socks off bold and flavourful ... cest lamour. ... That was years ago and my Aeropress has travelled to Hawaii, Spain, Peru, and many places in between since then. No concerns of ever settling for a mediocre cup of coffee. Digging to research I learned you can do one cup at a time, or fill the tube completely with grinds to make a concentrated brew for several cups. - Boil water - wait 30-40 seconds (195-205 degrees) - pour water over grinds in Aeropress - Stir to ensure all grinds are wet (you may need to add a little more water - particularly when using fresh roasted coffee as the grinds will bloom and fall as they off-gas) - Wait approx 1 minute - Flip & press - Enjoy as an espresso, or add more water to taste #lifestooshortforbadcoffee #freshroastedcoffee #travel #aeropress #espresso #americano #invertedaeropress #travel #coffee #tobeanornottobean #stratfordon #homebrew

The green beans in the bucket are how the coffee comes to us - uncooked - the pit inside a coffee cherry.... In Rosies cooling bin (which draws the heat down through hundreds of small holes to cool the beans quickly) the agitator spins a dark roasted batch, fresh out of the roaster.
