Steel cut oats (SCO) has always been my go-to breakfast. Not only is it super filling (high in fibre and protein), it never boring with different fruits and fun toppings. However, I just realized its been months - like pre-Covid, since I've had a bowl. Like most of you, Covid has complete disrupted my routine - at work, with meals and exercise. I'm sure y'all have been enjoying the unexpected burst of warmer weather that came our way over the last couple of days. I know I have! So I thought I'd share a recipe where we all can turn on our grills (in my case, my grill pan ) one last time for an easy and delicious Satay. My recommendation -- make this recipe in bulk! Personally, I make 2x the recipe. This will definitely become a family favorite and, cold satay as a quick snack or, to throw onto into a salad for p...rotein is pretty fantastic. And for those who count carbs or are looking to to reduce their intake of added sugar, no need to fear!
