Enjoy the last day of 2020 with some black cake and ice cream! Try pairing black cake with your favourite flavour of Sweet N' Nice Ice Cream, our team member Elle used Rum & Raisin. You can catch Elle and Sweet N' Nice on a Caribbean Christmas Dinner Episode on OMNI 1 in Ontario tomorrow at @ 8:30 am, and OMNI Alberta tomorrow @ 1:00 pm. In partnership with @caribvibetv Elle's Black Cake Recipe: Soak your favourite dried fruit with your choice of rum & red win. You can soak ...fruits for days, weeks or even months because the alcohol will preserve the fruits. Making the Cake Batter: Step 1- With a mixer or hand blender cream together 1/2 a pound of butter with a cup of brown sugar Step 2 - One at a time add 4 eggs to batter, mixing in-between each egg until incorporated Step 3. In a blender puree 2 cups of your soaked fruit with a tsp of cinnamon, nutmeg, allspice vanilla & almond extract, along with a table spoon of molasses & burnt sugar Step 4. Add the puree to the batter & mix well Step 5. In a separate bowl mix 2 cups of flour, 2 tsp of baking powder & 1/2 tsp of salt Step 6. Now add your dry ingredients to the wet batter, mix well & add to a greased pan to avoid sticking Step 7 - Bake cake for 1hr at 300 then turn down to 250 for 30 additional minutes or until done Step 8 - Once cake has cooled you can pour more rum & wine on top for extra flavour Enjoy!
