oh boy, am I ever going to try these! Just posted by another Consultant. Gluten-free Lemon and Blueberry Muffins 3 eggs C oil (vegetable or grapeseed)... C Greek Yogurt C unsweetened applesauce 1 tsp vanilla extract 1 package Epicure Lucious Lemon Curd 1 C Gluten-free all purpose flour 2 tsp baking powder tsp salt C blueberries (fresh or frozen) (optional) In a large bowl beat eggs, oil, yogurt, applesauce, Lucious Lemon Curd package and vanilla extract until well combined. Add gluten free flour, baking powder and salt. Mix well until all ingredients are well combined. Add blueberries, stirring gently. Let mixture rest 15 minutes. Preheat oven to 400 degrees. Pour Batter into a greased loaf pan or place in greased or in cupcake lined muffin tins. Bake for 25-30 minutes until a tooth can be inserted and comes out clean. Makes 1 loaf or 1 dozen muffins.
