What goes into making our 2017 Appassimento Dessert Wine Meritage? Here's our process: 1. The grapes were hand-harvested with excellent flavour when the fruit was hanging clean on the vines and were carefully arranged with 5-6 clusters per picking bin. 2. The bins were arranged carefully in drying kilns to slowly dehydrate until they reached the desired phenolic profile and sugar concentration. Dehydrated clusters were then transferred into to the...ir fermentation vessel. 3. Once alcoholic fermentation was complete and the tannin structure was right, we gently pressed each batch of wine off of the skins and pumped it to a settling tank. 4. The wine was put into barrel for malolactic fermentation and aging. It was sulphured in barrel to preserve the character and fruit, continuing to age with careful monitoring for 20 months. 5. Tested weekly, the wine was taken out of barrel when ready and transferred into tank as the final wine. 6.
