Step 2: Choosing and Ordering your Bees As a new beekeeper it may seem like bees are bees, however we live in a challenging climate of short hot summers and long cold winters and it is important to select bees that are adapted to this area. Members of the Ontario Resistant Honey Bee Selection program have been working together since 1991 to selectively breed disease resistant bees that do well in our climate. Overwintered queens have already made it through one winter a...nd are a good choice for a new beekeeper. We have been ORHBS members since 2018. With spring being the best time to get started in Beekeeping, I thought I would run a Getting Started series of posts: # Step 1: Take a course. Bees aren’t at all like the other animals that we keep. A course will help you learn the equipment, the life cycle and husbandry of bees. I would normally recommend an in-person course, but with COVID we have to adapt. The first step in making creamed honey is adding some of the previous batch. These fine seed crystals will multiply in the new batch, crystallizing there honey with a nice smooth texture. In a day or two we’ll bottle it and put it in a cool place to set for a week or two. In spite of its name, the only ingredient in creamed honey is honey.
