We haven't been posting a lot in the last while, as our founder Eldric has been launching his new project @harkencoffee, but for other reasons as well. The world is facing massive disruption with the pandemic, the protests against racial based police brutality in the US, and also many other issues like the fentanyl crisis and pipeline protests here in Canada. It didn't feel like the time to be posting about our product. ... It was important that we respected the significance of the movement, while also using what little influence we may have as best we could through Harken's account, which we were more active on for the past while. Coffee is ultimately about community and bringing people together, and we hope that we can also use this platform to bring awareness to important issues we care about, while sharing our love for coffee with you all.

Our other project Harken Coffee Roasting Co is launching its first offering of beans starting tomorrow at noon. The official open date is June 1st, but for now you can buy beans online and have them shipped or pick them up in store. This has been a nearly two year long effort to open my first roastery, and I am super excited to share some wonderful coffee with you.

Aeration. One of the most important things we did with our coffee was to introduce air into the equation. You don't have to use a red wine aerator like this, you can just pour the coffee from one vessel to another from high enough that it aerates and bubbles. What does it do? Like with red wine it opens up the flavours, and it adds clarity. It also helps balance out the carbon dioxide in coffee, which is what (in my experience) makes coffee taste dry. You lose a little bit o...f body (it feels "lighter" because of the air), but the overall benefits are quite astonishing. Has anyone else played around with aeration? After experiencing its effects my self, a search online showed me that people have been experimenting with it for a while (@jimseven did a post about it in the past). Not a new discovery, but neither is it common. Recommend trying it yourself, and see if you can taste the difference.
