Congratulations to all of the runners who were in the Banff Marathon!! This was my first time running a 1/2 marathon and I'm happy to say I finished injury-free with a time of 2:13. How do you fuel your body before pushing it to the limit? My favourite way to get in a whole lotta calories before running is by blending good quality fats into my morning coffee. On race day I put 2 tablespoons of Ghee, 1 tablespoon of Coconut Oil, 2 tablespoons of Collagen Protein, soy milk and honey in my coffee.

There was a giant bag of organic apples for sale, and I realized quickly I wouldn't be able to eat them all before they'd start to spoil, so I decided to cut them all up and make stewed apples! Simply combine your chopped apples with a tablespoon of Coconut Oil and a sprinkle of Cinnamon. Cook over medium heat in a saucepan for 25 minutes, or under the apples become softer and lose some of their water. Stewed apples are one of my favourite things to add to a simple salad. This salad was made from arugula, strawberries and stewed apples, dressed in olive oil, apple cider vinegar, tamari, tahini, miso paste, nutritional yeast flakes, grated garlic, black pepper and lemon juice.

Did you know that quinoa is a complete protein? This means it contains all 8 essential amino acids. My favourite way to eat quinoa is to combine it with a bunch of fresh herbs (parsley, cilantro and dill in this case), tomatoes, sweet onion and cucumbers dressed in olive oil, apple cider vinegar, lemon juice, garlic and tons of black pepper. I like to mix all the ingredients while the quinoa is still hot so that it soaks up all of that delicious dressing, and then chill it before serving. It makes for a delicious and nutritious summertime lunch!

Whipped out my spiralizer to make this plant-based zucchini salad with roasted baby tomatoes, alfalfa sprouts and avocado. Have you tried spiralizing zucchini? It's a great way to make eating (and making) salads a little more exciting!

How do you break your fast? For the past month I've been intermittent fasting and have been surprised with my results. I thought I'd be shaky, cranky and have low energy levels when going for runs or workouts in the morning, but have been surprised with how I've actually felt energized, motivated and focused! When I break my fast (usually around 11am-1pm) I like to fill my belly with nutrient-dense protein and fat-rich foods like this delicious bowl! What are your favourite things to eat for your first meal of the day?

Did you know homemade nut milk is super easy to make? I like to make Cashew Milk because it requires no straining! Combine a handful of raw, organic cashews with 3 cups of cold water. Put them in the fridge overnight. In the morning pour the cashews and water into a blender and add a pitted Date and a sprinkle of Cinnamon. Blend on your highest speed until the milk is creamy and thick. Store in the fridge for up to 5 days (if you can make it last that long!). I always like to... add cinnamon to anything with natural sugars (like dates) because it helps to balance your blood sugar. xoxo
