Fooling around today with a different flour in the starter and a new flour Blend with more water, along with new bantons. Just a whole bunch of new, with our custom lighter crust! (meaning no broken teeth here, just sore jaws!)

Long day today! Went to Red Deer picked up supplies. Red Deer is where we meet the delivery truck. Tomorrow we start making pastry for butter tarts! I suppose 40 lbs of Lard will give us a lot of pastry shells.

Nothing says yummy like Nanaimo bars & Sourdough! We like our Sourdough lighter then most. While darker builds a flavour profile, it also makes the crust harder, which a lot of people find hard on the teeth.

Alberta Baked: Butter tarts have been sent out for testing, All made in house! Pastry and all! Yup, we press our own shells.

The Breadman just left with the last orders of the year! Out the door went Sourdoughs, Loaves of Sandwich bread, and cookies. Thank you to everyone!
