Ingredients:... 1.5 C flour of choice 1 tbsp coconut oil or butter melted 2/3 C coconut sugar or monk fruit Sweetener 2 tsp baking powder Pinch of salt 1 mashed banana 1 handful crushed pistachios 1/2 C almond milk 1 tsp vanilla extract 1 C fresh spinach Mix flour, sugar, salt and baking powder in a bowl. Blend remaining ingredients (except pistactios) and mix into the dry ingredients. Fold most of the pistachios into the batter, add to a muffin tin (8-10 muffins) and top with remaining pistachios.
