It's Wok Wednesday in our house and we are trying out a new recipe! Epic Life Challenge Approved!! Orange Rosemary Garlic Chicken 20 min... 4 servings $1.58/serving Perfectly Balance Your Plate Serve with 2 cups spinach and 1 tbsp Epicure dressing of your choice. (balsamic is my fav!!) Ingredients 1 cup uncooked white rice 2 cups water 1 tbsp oil 1 red onion 1 lb (450 g) boneless, skinless chicken thighs 1 orange, such as Navel or Valencia 1 tbsp honey 1 tbsp Epicure Rosemary Garlic Seasoning 1 tsp cornstarch Toppings (optional): sliced green onions Preparation In Epicure's Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered, on high for about 1618 min, or until tender. In Epicure's Wok, heat oil over medium-high heat. Meanwhile, cut onion in half lengthwise, thinly slice each half. Add chicken to wok. Cook until golden-brown, about 23 min per side. Add onion; cook for 2 min, stirring halfway through, until softened and slightly browned. Cut orange into quarters. Using Epicure's 2-in-1 Citrus Press, squeeze juice into a bowl, you should have about 12 cup. Whisk in honey, seasoning, and cornstarch. Decrease heat to medium-low. Pour sauce into pan; simmer, stirring and turning chicken to coat with sauce. Add more water to thin sauce, if needed. Serve with rice.

I'm obsessed with this sandwich-- well to be honest I have been putting it on a flatbread. But kinda the same. I had no idea that following the Epic Life Challenge | Défi vie épique (Jan 2021) would taste so good! I double the recipe for leftovers. The butter chicken is awesome over rice, in a wrap, on nachos, or my friday fav--> on a pizza... 20 min 4 servings $3.64/serving Perfectly Balance Your Plate Serve with 1 cup veggies on the side (or in your sandwich!) Ingredients 1 pkg Epicure Butter Chicken Seasoning (Pkg of 3) 12 can (14 oz/398 ml) coconut milk 12 can (5.5 oz/156 ml) tomato paste 1 tbsp unsalted butter, melted 1 lb (450 g) boneless, skinless chicken breasts, about 2 breasts 12 bunch fresh cilantro 12 cup 2% plain Greek yogurt 12 tbsp lemon juice Sea Salt (Grinder), to taste Black Pepper (Grinder), to taste 4 wholegrain burger buns, toasted Preparation In Epicure's Multipurpose Steamer, whisk together seasoning, coconut milk, tomato paste, and butter. The sauce will be thick. Add chicken breasts; press down firmly and flip to coat with some of the sauce. Cover; microwave on high, 9 min, or until cooked through. Meanwhile, prepare yogurt sauce. Discard cilantro stems. Coarsely chop leaves; place in a bowl. Stir in yogurt and lemon juice. Taste and season with salt and pepper. Once chicken is cooked, let rest 2 min, then uncover. Remove chicken to a cutting board. Using 2 forks, shred chicken. Stir back into sauce (in steamer), including any juices on the cutting board. Divide chicken mixture on bottom half of each bun; spread top bun with yogurt sauce, then cover. Nutritional Information Tips For a tasty twist, add Lemon Dilly Dip Mix to the yogurt sauce. And you only need a small amount of oil (or you can even stir-fry using Epicure prepared Broth) Steps 1. Get the wok ready. As well as your Saute spoon. 2. Choose your oil (something with a high-smoke temperature) 3. Choose your protein: Poultry, Tofu, Salmon, Pork, Beef, Shrimp. Have your protein cut into thin strips to ensure quick and even cooking. Once the protein is cooked (remove from heat). 4. Cook the vegetables. Ingredients MAKES: 30 BARS (15 SERVINGS) 1/4 C Tutti Fruity Whole Food Topper, or Cocoa Crunch Whole Food Topper... 2 C rolled oats 1 scoop Power Up Chocolate Protein Blend , or Vanilla Optimum Vegan Protein Blend 1 C unsweetened apple sauce 1/4 C coconut oil, melted 2 Tbspchia seeds 1 1/2 tsp Cinnamon (ground) Toppings (optional): Cocoa Acai Smoothie Booster, Super Greens Smoothie Booster, pumpkin seeds, sunflower seeds or desiccated coconut Preheat oven to 375 F. Place Perfect Petites on Sheet Pan. Divide whole food topper and any additional toppings, if desired, into 30 wells in Perfect Petites. In bowl, stir oats and protein blend with apple sauce, coconut oil, chia seeds, and cinnamon. Spoon mixture into Perfect Petites ; press to flatten. Bake until firm, 15 min. When cool, twist pan to pop out.

Like everything else, lunch at school is going to look different this fall. So, what to pack? Kids of all ages can participate in making or assembling their lunch, and having them choose what they get increases the chances they'll actually eat it.... Planning for leftovers at dinner can take care of lunch the next day if you have a thermos. It may be wise to pack a small bottle of hand sanitizer, or make a meal that requires a fork to eat so kids aren't directly handling their food. And don't forget to pack a refillable water bottle, as public fountains are a no-go. If school is happening at home, lunchtime provides a great learning opportunity for all ages it's a built-in foods course! It's impossible to not learn something in the kitchen. Following a recipe is good reading practice, measuring involves math and fractions, and there are elements of science and problem-solving. Whether you're staying home or packing lunch to go, no-bake energy balls are simple to blitz together in the food processor. They won't crumble in transport and keep well in a container on the countertop to nibble all week long. Measurements here are very flexible. The goal is to aim for a mixture that will hold together when you squeeze it. These are perfect for little hands to roll.

Homemade peanut butter chocolate granola. 1/2 c peanut butter (or any nut or seed butter) 1/2 c coconut oil 1/2 c maple syrup... 1 scoop Power Up Chocolate Protein Powder 1 tsp Apple Pie Spice 1 tbsp Cocoa Crunch 2 tbsp Summer Berry 1/2 c shredded coconut 1/2 c raisins 6 cups oats (gluten-free if needed) Preheat oven to 340 degrees F. In a multipurpose steamer combine peanut butter, coconut oil, & maple syrup. Warm in the. microwave until combined and pourable. Add remaining ingredients. If it appears too wet, add more oats. Spread evenly on 2 large baking sheet (lined with a silicone sheet pan liner) and bake for 18-22 minutes, or until evenly golden brown. Watch closely as it tends to brown quickly near the end. IMPORTANT: Toss once around the 15-minute mark to ensure even baking. Remove from oven, toss gently to release heat and let cool completely on the pan. Transfer to mixing bowl or storage container. Enjoy added on greek yogurt - my favorite. Fresh fruit will take it to the next level.

We added leftover chicken we had in the fridge, but prawns or sausage would take no time to add. The Alfredo is creamy, tasty, and made with simple ingredients.
