Let's talk miso! Last week I asked you what's your favorite gut healthy food and many of you chose miso. Miso is a paste made from fermented soybeans. It contains live bacteria that may have benefits to gastrointestinal health. The simplest way I enjoy miso is making miso soup. It's really quick to make and doesn't require a lot of ingredients! If you want to make it more filling, you can add some tofu, green onions and/or enoki mushrooms. It also makes great soup base and ...salad dressing! Miso soup: Boil 4 cups of water and add 3 tbsp of miso paste. Whisk paste until well dissolves. Optional add-ons: - add cubed silken tofu - add chopped green onions (another gut friendly food!) - add enoki mushroom, ends trimmed, wash & drained If you want to learn more about gut health and diet, join me in my upcoming "Eating for a Healthy Gut" workshop on November 23rd from 6-7pm. Fall is definitely my favorite season of the year with all the cozy colors and abundance of local harvest! Not to mention that local pumpkins are everywhere, including our diet! This pumpkin pie parfait can be enjoyed as a snack or dessert! It's packed with vitamin A, vitamin C, calcium and protein. Mix 1 tsp of pumpkin pie spice and 1 tbsp of maple syrup with 1 cup of pumpkin puree. Layer pumpkin puree with 1 cup of Greek yogurt and top with your choice of cereal.... I had this as an afternoon snack and crumbled a few cinnamon toast crunch as garnish. You can also top with granola, pecans or walnut or fruits.
