Super EASY, so YUMMY Avacado & Egg Toast ! It was pizza night for the kids the other night for dinner and I felt like something quick and easy but also satisfying and delicious ! This totally checked off all the boxes ! - Toasted Black Russian bread from @commissosfreshfoods... - Spread with avacado smashed w fresh lime juice & pink Himalayan sea salt - Sprinkle of feta cheese - Mini tomatoes, sliced - Organic egg fried in butter ghee - Fresh cilantro - Drizzle of balsamic glaze OR sriracha sauce So quick & easy! ! This smiling 10 year old was the total opposite 45 min before this photo. He had just finished home school, sitting all day long in front of a screen and was mad that I said he had to exercise with me instead of playing video games online with his friends. (And when I say mad, stomping, yelling and nearly in tears, mad. ) Look at this face 45 min later. He happily stayed to help me film these videos and he was ...!! Seriously, EXERCISE IS THE BEST MEDICINE. It literally changes your mood. I try to instil in my kids the benefits of exercise for their physical health but more than ever, for their mental health right now. SO many sicknesses and diseases can be prevented with a few simple changes of eating healthier, MOVING, and limiting exposures to toxins. Prevention is key! Our children’s mental health is so important ... and right now it is really being tested. Exercise and movement can help with anxiety, depression, sadness, lethargy and more! Get your kids up and moving ... schedule walks outdoors, pick 6 exercises and do them as a family for 30 minutes. I am telling you, IT HELPS! This is a little peak at some of what we did in our family / youth zoom today!! We had a blast! Sessions will continue through February... time change as we are going back to school!!! If you’re looking for a little healthy dinner inspo for this week I’ve got a great idea for you!! I have been in a bit of a cooking rut lately ... our oven broke Dec 21 and we have been waiting for parts ever since. (I mentioned we have 3 hungry boys right lol?!) Thank goodness for a bbq and our little airbake oven! I have been craving nachos and thought I’d try to make my own healthier version! These came out delish!... & ! Ingredients: - sweet potatoes - olive oil - sliced mushrooms - sliced bell pepper - mini tomatoes, quartered - black olives - jalapeños, sliced - shredded bbq chicken - black beans, rinsed & drained - jalapeño havarti cheese, shredded - avacados - limes - sea salt - fresh cilantro Directions: - Peel & slice sweet potatoes thinly. Toss w olive oil and spread out over baking sheet. Bake at 375 for 10-12 min, flip and bake 8-10 min more or until cooked & slightly crispy. - Spread layer of baked sweet potatoes on pan. Top w mushrooms, peppers, tomatoes, beans, jalapeños, bbq chicken, olives. Layer more sweet potatoes and more of above toppings. Bake for 10 min, add cheese and bake until cheese melts. While baking, smash Avacado with fresh lime juice & sea salt. Serve nachos warm ... top w fresh Avacado mash & fresh cilantro! !!! AND I don’t k...now about you but exercise is keeping me SANE these days and head above water on days that feel really heavy! ! I decided last minute (literally at noon today ) to cook a Thanksgiving dinner. I just was really feeling like we needed some feelings of normalcy, of home, of tradition. Thanksgiving has always been one of my most favourite holidays ... it’s not a holiday about gifts, or a party ... it’s ALL about Family and being Grateful for so very much that is great. I miss my family so much... as I cooked I ...thought about how Happy I will be and how Special it will be to finally get that time together again. Thankful, grateful, appreciative for so much in life ... and focusing on all that is Good ... because the Good gets Better . And everything is even better when it involves chocolate - just saying! I created this quick little chocolate cream pie and I have to say, it was delish!! INGREDIENTS Crust * 3/4 cup almonds * 3/4 c pecans * 1/2 c Brazil nuts * 2 pitted Medjool dates * 1/2 cup (40g) cacao powder * 1/2 tsp sea salt * 1/4 cup (50g) coconut oil Filling * 12oz@lilys_sweets chocolate * 3 cups almond milk * 1 tsp pure vanilla extract * 1/2 c frozen dark cherries * 1/2 tsp cinnamon * 1 cup pitted medjool dates (soaked in hot water to soften) Add crust ingredients to food processor and process until well combined. Press into pie plate evenly and up sides. Melt chocolate slowly and carefully, stirring so it doesn’t burn. Blend dates, almond milk, cinnamon, vanilla, cherries in blender until smooth. Add in melted chocolate & blend until smooth. Pour into prepared pie crust. Chill, serve w a dollop of coconut whip! It was so yummy!
