#whatsonthemenu STARTERS edition, day 2. CHICK-CHARON deep-fried cracklings made from chicken rinds, served on a bed of onion tanglers with our house-made spiced vinegar. The chicharron is a popular finger-food snack not only in the Philippines but in other parts of the world with Spanish influence, Latin America and southwestern United States. Different variations of this dish include pork, mutton and even tuna, deep fried to a crispy and puffy state after the rinds have b...een seasoned. Fun fact: one of the owners of AMIHAN used to make and distribute pork chicharon to Filipino restaurants and shops in Calgary. They have mastered the technique in seasoning and cooking this dish so expect that our CHICK-CHARON is one of the best, if not the best in town. Fun Fact: Our LUMPIA recipe was unselfishly handed to us by one of our friends (and you know who you are), who makes these amazing appetizers everytime she hosts celebrations, when we approached her that we are opening up a restaurant and if we could use her recipe for this offering. At the beginning, we were uncertain, people called us crazy opening up a shop in the midst of the pandemic where a lot of businesses had shut down but trusting in our concept, the quality of food that we offer and our passion to elevate Filipino food, we did it anyway. Our heart...s are overwhelmed by the support you have given us and the feedback we have received on our food, our service and the welcoming ambiance of the restaurant. We know we are not perfect and we strive to be better on areas we need improvement on. Let us thank you with our full and sincere hearts. Another week, another section of #whatsonthemenu This week we are featuring the AMIHAN starters, our section of the menu highlighting Filipino street food. OKOY deep-fried calabasa fritters with glutinous rice batter topped with shrimps, served with our house-made spiced vinegar and atchara.... Our OKOY uses Canadian-grown and harvested ingredients cooked using the traditional method of cooking this popular dish. In the Philippines, different variations of this dish are available using papaya, bean sprouts, sweet potatoes, carrots with small fish or calamari replacing the shrimps.
