Today’s VEGETABLE is watercress. Watercress is a cruciferous vegetable of the Brassicacea family which includes kale, Brussel sprouts and cabbage. Watercress, also known as nasturtium officinale, is a leafy green vegetable. It’s a perennial aquatic herb that can be used in salads or cold soups. Its tangy peppery taste can make a nice garnish on burgers or in sandwiches, depending on your tastes. This vegetable grows near water, but if you wish to grow it at home, it can be g...rown in a container with soil that remains moist. Although watercress prefers to be in slight shade, it can be grown in full sunlight. A tray by a kitchen window would suffice as long as one can ensure the soil remains moist. Watercress and Cress plants are easy to grow in temperatures of 60-70 degrees. Seeds do not need to be buried deeply, but sprinkled on loose soil and lightly covered with same. Seeds will germinate within 7 days and be ready for harvest in 2 weeks. An easy herb to grow, but is it beneficial to us to add to our diet? Watercress is an extremely nutrient dense vegetable. I would say bordering on a superfood. In one cup (34 g) of watercress, of only 4 calories, there is 0.4 g carbohydrates 0.8 g protein and 0.0 g of fat. That’s doesn’t sound too powerful a food, yet watercress is listed as number 1 on the Center for Disease controls list of Powerhouse Fruits and Vegetables. In that same one cup of watercress, there is also 22% of the RDI for vitamin A, 24% of the RDI for vitamin C, and 106% of the RDI for vitamin K as well as 4% of RDI for calcium and 4% RDI for manganese. That may not seem like much but wait, there are also small amounts of vitamins B1, B2, B5, B6, B9, vitamin E, magnesium, phosphorus, potassium, sodium and copper making this vegetable a true powerhouse. So nourish your body with watercress, you won’t be sorry you did! But HOW, you ask? As mentioned, garnishes or salads, soups. Watercress can be used for smoothies or to perk up a sandwich with its peppery taste. Add pizzaz to your sandwich today! Watercress can be used in stir fries, pestos or dips as well. Be creative!
