Sweet potato spice muffins are still a favourite go-to snack, shared by my dear friend @ashleylweber almost 10 years ago! The nutmeg and cinnamon are warming spices, making it a nice treat for the cooler days ahead Ingredients: - 2 cups nuts (I use almonds and walnuts) - 1/2 cup coconut flakes... - 1.5 cups grated sweet potato (skin included) - 4 eggs - 1/4 cup coconut oil, melted - 1/4 cup honey or maple syrup - 2 tsp baking soda - 1 tbsp apple cider vinegar - 1/2 tsp cinnamon - 1/4 tsp nutmeg Preheat oven to 350. I’ve recently been loving egg muffins! They’re easy to make and are a great protein packed snack or breakfast on-the-go. Recipe featured above: - 1 tbsp avocado oil - 1/2 onion, finely diced - 3 cloves garlic, minced - 1 red bell pepper, finely diced... - 1 cup Swiss chard, chopped (can substitute with spinach or kale) - 1/4 cup fresh parsley, chopped - 10 eggs - 1/4 cup milk or milk substitute - salt and pepper to taste - 1 large zucchini, thinly sliced (or substitute with asparagus or broccoli) - 6 slices prosciutto (optional) Preheat oven to 350. Sauté onions and garlic in avocado oil, then add red pepper, chard and spinach until chard has wilted. In a separate bowl, whisk eggs, milk, salt and pepper. Add in the garlic/onion/veggie mix and zucchini and stir until well combined. Line muffin tins with a muffin liner and half a slice of prosciutto (if using). Simple summer salad! It’s been too hot to cook so lunches have been a random combination of what’s in the fridge. This combo worked quite nicely, with everyone going for seconds! 1 can black beans, rinsed corn, cooked & sliced off two cobs 1 red pepper, diced... 1 orange pepper, diced 1/3 cucumber, chopped 1 cup edamame, cooked fresh chives and cilantro, to taste juice of 1 lime 1/4 cup EVOO salt and pepper pepper to taste #healthyanddelicious #summersalads #naturopathicdoctorapproved

First attempt at zucchini banana chocolate chip muffins a success! With all the extra zucchini from the garden I need some more ideas to use it up. What are your favourite summer zucchini recipes? Ingredients: - 2 tbsp ground flaxseeds + 3 tbsp water - 1 zucchini, grated... - 2 ripe bananas, mashed - 1/4 cup almond milk (or another milk substitute) - 2 tbsp natural peanut butter - 1 tsp vanilla - 2 cups oat flour (purchased from @bulkbarnfoods but can be made by blending oats) in a food processor - 2 tsp baking powder - 1/2 tsp baking soda - 1 tsp cinnamon - 1/2 cup mini chocolate chips Directions: - Mix flaxseeds with water and set aside for 2-3 minutes. - Mix dry ingredients (oat flour, cinnamon, baking powder and baking soda). - Mix wet ingredients (zucchini, bananas, milk, peanut butter, vanilla and flax/water mixture) - Combine wet + dry ingredients, fold in chocolate chips - Bake at 350 for 18-20 minutes #veganmuffinrecipe #zucchinimuffins #summerbaking

My favourite salad these days: cheesy garlicky kale salad. The base is kale massaged with dressing below), topped with sunflower seeds, pumpkin seeds, hemp seeds and nutritional yeast. I’ll either add chickpeas or chicken for extra protein. Do you have a favourite summer salad? Trout, Swiss chard, and pesto pasta for dinner tonight! So often when I speak with patients about nutrition to support their health goals I’m asking them to modify what they currently eat rather than start a whole new diet plan. My three most common recommendations: increase the portion of veggies (2 cups or half the plate) increase the portion of protein (1/4 of the plate) reduce the portion of carbohydrates (1/4 of the plate or less than the size of the protein)... Here’s one of my favourite go-to’s: 1 cup fruit (today I used frozen wild blueberries and bananas) handful of spinach 1 cup cashew milk (use more if you like a thinner smoothie) 2 tbsp almond butter... 1 tbsp ground flaxseeds 1 tsp fish oil (flavour is 100% hidden in the smoothie) 1 scoop protein powder (I rotate between @designsforhealth and @sunwarrior ) Blend until smooth and creamy and enjoy! Can’t get enough of this creamy, delicious, peanut butter banana ice cream! Just 3 ingredients: 3 ripe bananas (frozen in slices) 1/4 cup natural peanut butter 3 tbsp chocolate chips... Blend bananas and peanut butter in a food processor with an S blade until creamy and smooth. Top with chocolate chips and enjoy! Getting ready for a quiet night in with one of my favourite guilt-free snacks, #kalechips ! So simple to make: preheat oven to 375, tear a bunch of kale into bite sized pieces, add 1 tbsp olive oil, 2 tbsp tahini, 1/2 tsp salt and mix well with your hands to combine. This new recipe from the July edition of #alivemagazine is a keeper! Honey glazed chicken with golden beet salsa, served with a side of wild rice and grilled zucchini. Beets are a great blood builder and one of nature's best liver cleansers. At the end of summer and early fall when they're in season, I try to eat them at least once a week.
