Mediterranean Turkey Burgers with pesto mayo and roasted red peppers Takes 30- 40 mintues to make Note: the recipe only makes enough for 2, you can obviously just add more to make a bigger portion. What you need:... - Minced Turkey ( 285g) - 2 Artisan Buns - 1- 2 Sweet Bell Peppers - Mayonnaise (55g) - Baby Field Greens - Basil Pesto (14g) - 1 Shallot - White Wine Vinegar (15g) - Dijon Mustard (10g) - Cooking Oil - Salt and Pepper - Sugar (1/4 tsp) - 2 tbsp Garlic Breadcrumb Spice Blend (See below for directions and recipe for the spice blend) GARLIC BREADCRUMB SPICE BLEND What you'll need: - 4 ounces Italian bread, cubed - 1 teaspoon garlic powder - 1 teaspoon dried parsley flakes - 1/2 teaspoon dried oregano - 1/2 teaspoon dried basil - 1/4 teaspoon dried thyme - 1/4 teaspoon dried rosemary, crushed Directions: Place all ingredients in a blender or food processor; cover and process until fine crumbs form. Transfer to a 15x10x1-in. baking pan. Bake, uncovered, at 350 for 8-12 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container. Once Garlic Breadcrumbs are done, you can now start the recipe for the burgers. Directions for Mediterranean Turkey Burgers: (Preheat oven to 450F, once preheated start recipe) STEP ONE: - Wash and dry all produce - Cut the peppers into 1-inch strips - Cut Shallot into thick rounds STEP TWO: - Prepare a parchment-lined baking sheet - To the baking sheet, add peppers, shallots and 1 tbsp oil. Season with salt and pepper - Roast on the middle rack of oven, for 10-12 mins, until tender. STEP THREE: - Meanwhile in a large bowl, add turkey and garlic breadcrumb spice blend. Season with pepper. - Mix well to combine STEP FOUR: - In a large non-stick pan, heat 1 tbsp oil over medium- high heat. - While pan heats, with damp hands, form turkey mixture into two 5-inch wide burger - When pan is hot, add burgers. Cook, for 4-5 mins each side, until cooked through. STEP FIVE: - Meanwhile havle buns. - Directly to another baking sheet, add buns - Toast on the top rack of oven, for 3-5 min - In a small bowl, mix together mayo and pesto STEP SIX: - In another large bowl, whisk together vinegar, mustard, 1/2 tsp sugar and 2 tbsp oil. Season with salt and pepper. - Add baby greens and toss to coat - Spread pesto mayo on buns - Layer bugers, roasted veggies and some salad on the buns. Place remaining salad alongside.
