FIT FOOD FRIDAY Spinach & cheese omelette with bread Ingredients... 2 whole grain bread slice(s), 100% whole grain (~3 oz) 1 tbsp olive oil (extra virgin) 2 oz feta cheese 3 whole eggs (~5 oz) 2 cups spinach leaves (raw) (~2 oz) optional: tsp basil (dry) optional: tsp black pepper Instructions Heat olive oil in a saucepan. Wash spinach and add it to saucepan. Cook over medium heat for 3 to 4 minutes or until softened. Crumble in feta cheese. Stir in egg(s) and cover the pan. Cook 2-3 minutes. Sprinkle pepper and basil on top.
