Crabapples remind me of fall - my mom used to preserve them and my brothers and their friends used to have crabapple wars... We recommend using ours for preserves: simmer briefly in salted water, drain then marinate in a cooked syrup of 4 parts brown sugar / 1 part cider vinegar and cinnamon sticks (I like to add cloves , allspice and a little cardamom as well) Remove any whole spices before processing. I also chose to add a little homemade red wine vinegar to give a little ‘mulled wine’ flavour to the crabapples #eatlocal #urbanfarming #fallfavorites
The summer was cooler and wetter which meant we ended up with a few too many unripened watermelons this season. I hate wasting food so I turned to my MIL’s recipe for ‘Pickled Watermelon Rind’ - apparently an old southern tradition of making use of everything! Roasted local tomatoes with roasted local peppers (sweet n hot) and local onions and local garlic to make batches of goodness for Tomato Soup this fall: Tomato Soup Recipe: (serves 6-8 people) Tomatoes cut into quarters... 1 onion, cut into quarters 1 tin diced tomatoes 1 tin tomato sauce 1 tin pizza sauce seasoning to taste Toss tomatoes and onions with some olive oil and seasonings (we often use Clubhouse Greek seasoning), and some salt, and pepper. Roast tomatoes and onion on a baking sheet in the oven at 400F for 20-25 minutes, or until done. In a large saucepan over medium heat, combine diced tomatoes, and both tins of sauce. Add in roasted tomatoes & onions, (& peppers & garlic if using ) and use immersion blender to make more soup-like consistency. Season to taste, if required.
