RECIPE OF THE WEEK: Wild Mushroom and Bacon Linguini This creamy yet, not too heavy dish is a week night family favorite. Quick and easy to prepare it has a truly Gourmet taste. Using our Cheddar & Bacon Dip Mix. Serves 4. Ingredients... -1 pouch Cheddar & Bacon Dip Mix - 1 tbsp (15 ml) butter - 1tbsp (15 ml) olive oil - cup (120 ml) shallots, finely chopped - 1 tbsp (15ml) garlic, minced - 4 cups (960 ml) assorted wild mushrooms, finely sliced - cup (120 ml) white wine - 1 cups (360 ml) cream 35% Directions 1. Heat butter and olive oil in a large saucepan. Add shallots, garlic and mushrooms and cook for 10 minutes over medium-low heat. 2. Add wine and simmer for 4 minutes. 3. Add cream and Gourmet du Village Cheddar and Bacon Dip Mix (Available at Aspen Floors) and simmer for another 5 minutes. Season sauce with salt and pepper to taste. 4. Toss cooked pasta with sauce and serve with a sprinkling of parsley over top.

(30ml) olive oil - 1lb boneless chicken breast, in 4 portions, pounded Directions 1. Combine first 3 ingredients (add a little bit more oil if too pasty). In large freezer bag, add chicken and marinade. 2. Shake well, turning and coating all sides of chicken. Let marinate for at least 2-3 hours in refrigerator. 3. Heat skillet or grill. In the meantime, pat off excess marinade from chicken breast. 4. Cook chicken for 4-5 minutes, turn and cook 5 more minutes. 5. Chicken should be golden brown. Use a poultry thermometer to insure it is properly cooked. 6. Enjoy with a fresh lime wedge and pasta or rice.
