Top 3 Questions I’m commonly asked about Brewing Kombucha 1. Does it require allot of Sugar? I use 21/2 cups organic cane sugar for a 9.5 litre batch.... Kombucha will not ferment without sugar.. Good news is that the healthy probiotic bacteria culture consumes the sugar. As they feed on the sugar they cause the drink to ferment allowing for the growth of more beneficial bacteria. 2. How long does it take to Brew Kombucha? Kombucha can be brewed from 7-30 days. My brews are typically ready after 21 days. A longer brewing time results in less sugar and stronger flavour. Temperature will play a role in how quickly your batch becomes cultured. 3. How long does second ferment take? Im back to baking sourdough bread. It is a time consuming labour of love but the long fermentation process of making sourdough bread releases nutrients in a way that allows our bodies to process them more easily. Nutrients like iron, zinc, magnesium, antioxidants, folic acid and B vitamins.
