We wrapped up the coffee wagon season today. Thank you to each and every one of you, who came and supported the wagon over the summer! A great big Thank you also to Tessie and Hélène, for doing such a great job rocking the wagon this summer. We continue roasting year round, and you can keep finding your favourite coffees at our awesome retailers or online via the website. we will also be at the fireweed market in Whitehorse until the 24th of this month.

While it’s no match to the control and consistency on our Trabattoni, once in a while, we like dusting off this antique little wood fired roaster for personal pleasure. This is a French ‘home roaster’ from the early 1900’s that can fit right on to the wood cookstove or be used as a stand alone unit. It was also available in a small commercial model, which was regularly used for fresh roasting coffee in small general stores. While this is just for fun for us, once in a while you may smell the smell of coffee roasting way out in the boonies. Origin: Honduras Region: Marcala, La Paz Varieties: Caturra, Catuai, Typica Elevation: 1500-1800 masl Process: Washed, dried on raised beds Certification: Organic Cupping notes: Cocoa, Caramel, Stone Fruit Café Orgánico Marcala S.A. (COMSA) formed in 2001 with 60 farmers (12 women and 48 men) The founding mission of this organization remains the same today: to empower small farmers in the department of La Paz, Honduras to earn a dependable income through sound business and sustainable agricultural practices. Organic farming is at the heart of COMSA’s core values, consistent with their holistic vision: To be a competitive company, viable and known for quality coffee, managed with total transparency, gender equality and harmony with nature contributing to the improvement of living conditions of our members and their families. Marcala is located in Honduras’ Montecillos mountain range, and was the world’s first registered coffee Denomination of Origin. Producers in Marcala prepare to plant in a unique way and they also harvest in a unique manner, introducing a selection method at the picking stage. For many years the quality of Marcala coffee was unsurpassed in Honduras, and COMSA’s members carry that pride through every step of the process
