Roasted Jester squash for Christmas dinner! I got this tasty recipe from the amazing Kaelin from The Ruby Apron. Make this easy recipe for Christmas dinner and everyone will think you're the next Masterchef! Roasted Squash with Pistachio + Pesto A perfect recipe for this time of year - seasonal flavours and festive colours! - 1 _______ squash, halved, seeds removed and cut into 1/2" wedges - 2 tbsp goof quality olive oil - salt and pepper - 100g feta - seeds from half a pom...egranate Preheat your oven to 400F. Prepare your squash, coat with oil, season with salt and pepper. Place in a single layer on a baking tray. Roast in preheated oven for 25-35 minutes until squash is tender. Turning half way through. Pistachio Pesto - 100g pistachios - 70g freshly grated Parmesan - handful each of parsley, cilantro + dill - juice of 1 lemon - olive oil - about 125ml In a food processor blitz the pistachios, cheese, herbs, lemon juice and oil together. Season with salt and pepper to taste. Taste and adjust seasoning, adding more lemon juice, salt, pepper or oil if needed. Before serving place the squash on a platter, drizzle with pesto, add crumbled feta and Pomegranate.
