Wow, it has been quite some time since I have been here! Life gets busy and preoccupied sometimes but I have still been baking, just not real frequently. Today however I will bake for me. I have some bananas that need to be used up and I found a recipe for a chocolate banana cake with a chocolate ganache icing....I'm sold and will give it a try! And I wish you all a very happy CANADA day! How will you be celebrating this great country?

Valentine's Day is a mere 4 weeks away! If you are like me it is not a hugely celebrated holiday but it's nice to do something once in a while so I will be taking orders for 10" heart shaped cheesecakes (or cakes, or whatever you may desire). Cost will be $35 for cheesecake or cake, $40 if ordering toblerone fudge sauce with it. $10 from any Valentine's order will be donated to JDRF. And for those who may so desire, I will make broken hearts upon request as well. :-)

Tip #3 Needing some gifts for co-workers or friends? Homemade baking makes great gifts! There are lots of neat ways to be able to package up some delicious cookies, fudge or other treats. You can purchase some pretty boxes or tins, add a card a voila, you're done! If you are a more creatively inclined individual you can make your own packaging by using clean jars or containers and adding some pretty Christmas paper and/or ribbon. Happy Baking!

Tip #2 Start now. There's really no need to leave your baking till the last minute, if now is when you have more time make things now and freeze them. Happy baking!

Prepping (mentally right now) to get 3 cakes made today! 1 chocolate with chocolate icing for a birthday boy, and a flourless chocolate torte, as well as a coconut cake for a fundraiser Saturday night at the Palmerston CRC. The fundraiser is for the Esther School in Zambia, a project sponsored by the GEMS clubs.

Chopping up some Halloween Butterfinger bars to make cookies. May add some other candy bars but maybe it will just be butterfinger cookies. :-) Wanting to get rid of all the extra Halloween chocolate in your house? Make some cookies! You can make a big batch and always freeze some of the cookies, or I like to ball up all the dough and freeze it so they are ready to bake.

Happy Halloween to you all! This does not fall into the category of holidays that I love but I do love my neighbourhood! So I have made about 5 1/2 dozen chocolate chip cookies this afternoon and I have a big bowl of candy ready to go!

Yesterday I tried a new fudge recipe (snickers fudge), it is delicious! However, it seems to be missing some sort of stability factor so even though it's very good, it turns to goo unless it's frozen (yep, even from the fridge). So, it looks like I get to do some further creating with what I have, I'm thinking possibly a type of cookie tart. :-)
