But so delish. *You can use your favorite store bought vegan cheese, or make this quick "tofu cheese" similar to "requesón" Chancy back for a taste test ALSO... Whats your favorite store- bought vegan cheese (extra points if it STRETCHES) ? We either use the following brands: violife mozzarella, or follow your heart. RECIPE Ingredients: Corn tortillas 10 squash blossoms Avocado Salsa Salt & pepper "Tofu cheese" 1 (14 ounces) container medium firm or extra firm tofu 2 tbsp olive oil Juice of 1 lemon 2 tbsp any plant milk (I used oat milk) 1/2 tsp salt 4 tbsp nutritional yeast (I like Trader Joe's brand) 1/2 tsp garlic powder Instructions: 1. Remove tofu from package and wrap tofu block in 2 paper towels. Squeeze for 10 seconds then break apart tofu into your food processor. To the food processor add salt, 2 tbsp olive oil, lemon juice, nutritional yeast and garlic powder, plant milk. Pulse 6-10 times until you reach the consistency of rocotta cheese like consistency. Taste and adjust salt and seasonings as needed. 2. Clean off each squash blossom with a damp paper towel then trim the stems. In a pan over medium heat, add a tiny bit of oil and quickly cook the squash blossoms 10 seconds on each side. Season with a little salt and pepper. 3. Warm a cast-iron skillet or pan over medium heat. (Optional tip my mama taught me... wait till pan is super hot then quickly dip tortilla in water and add to hot pan. If the pan Dosnt sizzle then it's not ready!!!* flip the tortilla 10-15 seconds later...This makes your tortillas SO SOFT and fresh tasting giving a dry tortilla the moisture it needs. *** only do this tip w/ corn tortillas not flour tortilla*** 4. Sweet Potato Curry Soup Sometimes I whip things up on the fly with what’s in the fridge! Here we have:... 1 large sweet potato 3 medium carrots 1 medium onion 5 cloves of garlic 2-3 tbsp Curry powder Cilantro Inch slice of Jalapeño 2 cups mushrooms 1 inch of ginger 1 L of stock add few cups of water 1 can coconut milk Sea salt & pepper I made it in the instant pot- cooked for 15 min high pressure. Broccoli on the other hand is rich in fiber and low in carbohydrates and sugar. You’d have to eat a huge amount of Broccoli to reach the same amount of calories that just one small bag of candy could provide, and thanks to fiber you’d be full long before that could ever happen. Eating well should not be all about watching QUANTITY, you need to be paying attention to QUALITY. Real foods like colorful vegetables, low-glycemic fruits, healthy fats (like nuts, seeds, avocados, olives, etc.), gluten-free whole grains, legumes, and responsibly sourced animals proteins and seafoodthe foods I recommend in my Pegan dietare going to give your cells the information they need to function at their very best.
