The black-garlic emulsion is made with dijon mustard and sherry vinegar to add pungent and piquant flavour. Mushrooms en Papillote Served with papas arrugadas and romesco sauce.Thin slices of portobello, porcini, shimeji, and button mushrooms, along with pickled chanterelles, cooked with a roasted vegetable stock, fermented porcini and truffle, house-made herb butter, thyme, and bay leaves. Papas arrugadas (wrinkly potatoes) are a Spanish tapas bar staple, boiled with ample salt until the water evaporates, leaving the potato skins wrinkly. Romesco is a sauce from Catalonia, Spain made from tomato, peppers, almonds, smoked paprika and olive oil.
