Patio Update! Birreria Volo (Little Italy) will remain open as a bottle shop & grocery. The patio will be on hold as we prepare to re-open for service in the coming weeks. Bar Volo (Downtown) will have a few tables and chairs set up for casual outdoor service (with limited menu) from 12-8pm. Walk-in’s only and no reservations for now. Bottle shop, takeout and grocery will remain open.

Scuola di Volo - Flight School a series of educational tastings for beer, wine and spirits! Join us on March 27th at 7:30pm as we are pleased to announce our first virtual guided tasting with #vermouth. Hosted by one of our very own Juliana Wolkowski - this educational tasting will feature five vermouths from unique pockets of the world that are distinctive; one’s with a sense of regionality, tradition and innovation. @christinajuliana has spent the last 12 years in Toronto...’s hospitality scene. From late night snack bars to some of the world’s best bars - she has spent her career creating both accessible and educational platforms without losing the heart of hospitality and guest connections. Juliana will take us through a historical introduction to vermouth - its process, proper storage, botanicals and so much more. Plus the tasting will kick off with a Vermouth Spritz 101, so get your ice cubes ready! The Lineup: #Urraki Nebur, Spain - The producer had worked tirelessly in Italy previously and this is his ode to classic vermouths! @bodegasbarbadillo , Spain - This curious little one is from Sanlucar and it was first released in the 1940’s. But as vermouth declined in favour it fell out of the market. BUT it’s back, and boy are we happy about that! @marrowvermouth Dry Vermouth, Canada - Coming to us from British Columbia focusing on the all of the Canadian botanical wonders! Produced by a very talented young man named Shawn Dalton. @fratelli_branca Distillerie Carpano Bianco, Italy - Carpano is a legendary vermouth producer from the Torino region in Italy. The third wine release for this week...Dirty & Rowdy Family Winery is the story of The Dirty and The Rowdy. The Dirty is Napa based winemaker Hardy Wallace and his wife Kate Graham. The Rowdy is Atlanta based husband and wife, Matt and Amy Richardson. Hardy and Matt became close friends while living in Atlanta, Georgia. After Hardy moved to California, he began working with the iconic Cathy Corison in Napa Valley. It was in 2010, when Hardy teamed up with Matt and founded Di...rty & Rowdy @dirtyandrowdy has become a wine that is sought out by wine geeks across the globe, easily selling out the winery’s production every year. But the wine that’s produced isn’t another cult Napa Cabernet or an in-demand Pinot Noir. Instead the wines Hardy Wallace is making utilize grapes that are virtually unknown to most wine consumers Mourvedre is used for the brand’s red and Semillon for their white. Hardy is now making what many believe to be the purest examples of Mourvèdre in California. Grapes are sourced from a handful of small growers who focus on organic viticulture. Wines are vinified naturally, all fruit is picked by hand, only natural yeasts are used in the cellar and no sulfur is used at bottling. We are thrilled to have Dirty & Rowdy back in Ontario. Andi Weigand is part of the new wave of "college-escapee" winemakers sweeping Germany, overturning old expectations of his homeland's wine, but with a definite sense of place. The Volo crew first met Andi in London two years ago and it was love at first sight. At the time, his labels were simple duct tape across blank bottles which of course, drew us to his booth. After many rounds of the festival, we kept finding ourselves back at Andi’s wines because of how pure and delicio...us they were. We are beyond excited to have his wines back in Ontario - this is a small run, and a much larger one will be scheduled for Summer. The White blend is an all time favourite. Andi’s father was the first to make wine in his family. Andi took over the winemaking duties from his dad in 2015, and in 2018 decided to make the conversion to organics and natural winemaking. He says his father, unusually for the area and his generation, was very supportive of his desire to go in this direction. He now works as a team with his father, directing all the winemaking decisions. His vineyards are located on the Iphöfer Kronsberg, a slope that features Keuper soil. He uses an 80 year old basket press and very large wooden barrels. While he has modernized the winery, he has also maintained tradition: every grape is picked by hand, and every wine is carefully handcrafted, with incredible attention to detail. 3 Fonteinen Zenne y Frontera is a unique creation of Armand Debelder and maître-sommelier Andy De Brouwer. This natural millésime beer is a blend of young traditional lamics that have aged on forty-year old authentic Oloroso and Pedro Ximénez sherry casks. Zenne y Frontera is the perfect symbiosis of a few stubborn characters, a lot of wild ideas, a vast palette of aromas, and two beautiful regions. (*)There is a bottle limit of one per blend - your order will be refunded if you surpass this amount. The remaining bottles will be reserved for a private guided tasting with the new 3F Twist of Fate & Zenne y Frontera scheduled for Spring/Summer at Birreria Volo. ' This is a blend of eleven different sherry barrels - ten Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. The lambics originate from four different brews and were all a good year old when filling the sherry barrels. Accordingly, the weighted average age upon bottling was a tad more than 25 months. 100% 3 Fonteinen ' This is a blend of ten different sherry barrels - nine Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. We filled these with young lambic from four different brews and some with four-month-old lambic wort. The weighted average age upon bottling was 21 months. 100% 3 Fonteinen. ' This is a blend of ten different sherry barrels - nine Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. The lambics originate from five different brews and were all a good year old when filling the sherry barrels. Hey Toronto! Here is a wine produced by one of our very own Alanna La Gambla (@vindelagamba). She moved to Berlin and fell in love with wine after working in restaurants. In her travels, she met Martin Woerner (@marto_aoc) and worked at his winery. After learning the joys of harvest and cellaring, she soon wanted to make her own brand and planned her first vintage using Dornfelder and Sylvaner grapes grown in Rheinhessen, Germany. With Italian roots, Alanna wanted to make a g...erman style Lambrusco. Whole cluster fermentation, finished as a pet nat. Undisgorged. Unfined, unfiltered, with no sulphur added.The finished product, FRAUENPOWER!! A Gusher. Open ice cold & not wearing your favourite sneakers. This is a ridiculously fun wine with cola and red-berry expressions. Our new #cantinacrate features wine from our family’s hometown Pachino, Sicily: https://birreriavolo.com//prod/salvatore-marino-collection (3 Pack) A visionary interpreter of Pachino's traditional wine culture, Salvatore Marino surprises us with a range of pure and authentic wines made from native Sicilian grapes: biodynamic viticulture, spontaneous fermentations, minimal use of chemicals and full respect for the terroir are the foundations of his production philosophy.... Turi is the name Salvatore in Sicilian, to symbolize Marino's great love for his land and for his work Turi Rosso represents in a pure way the territory of Pachino, incredibly suited to the production of the most traditional red grape variety of the Sicily region: Nero d'Avola. To this is assembled an undeveloped ancient variety, the Pignatello or Perricone which together with Frappato and Nero d'Avola are the only grapes allowed inside the Eloro DOC. Turi Rosso is a wine that ferments in steel. It is a red with character and deep but at the same time balanced and velvety, which expresses a warm but not explosive fruit and splendid aromas of Mediterranean scrub, earth and eucalyptus. A wine that pays homage to Sicily very well! Turi Bianco obtained from pure Catarratto from vines in Alberello Pachinese, vinified in steel tanks with a short maceration of 3 days. Processed according to principles of biodynamic and natural agriculture, without sulphites or other chemical substances and with the support of the lunar calendar, this Turi Bianco Salvatore Marino represents pure Sicilian whites: intense straw yellow color, it expresses delicious hints of fresh fruit to the nose great and minerality, for a fresh and savory sip. Turi Rosato is based on Syrah grapes vinified in rosé that come from plants located in the Buonivini district, from a 4-hectare vineyard between the Ionian Sea and the Mediterranean Sea. All the work phases, from the vineyard to the cellar, follow natural agriculture principles: fermentation is spontaneous based on indigenous yeasts in steel tanks. Turi Rosato is a juicy and lively wine, characterized by greedy hints of red fruits and good acidity.
