Yes. We eat more than just beef. We eat veggies too Seriously tho, I do get ribbed a bit about posting all things beef & soooo okay with it.... Ya well, we are cattle ranchers & direct beef marketers so yes, it’s mostly about beef on this page. It is our staple...easily 3-4 times a week in our meal plan. And we are proud that we eat what we produce & what we offer to our customers. And yes, we do eat chicken, eggs, fish, seafood, pork & venison sausage for other proteins in our house too - I do mix it up in the Bar Z kitchen. Going to try to branch out & share some of the sides I do with the beef, & maybe some baking too (breads & dessert are side dishes, right ). My mom was an incredible cook & baker. Thus, I learned an appreciation for home cooking & baking early on, as I was often by her side in the kitchen growing up. This oven roasted veggie side is easily a 2x a week fix in our house. So easy to make, super tasty & healthy, & makes a great side to all proteins. Preheat oven to 450F - cut veggies to small uniform chunks...I use whatever I have on hand peppers, onions, mushrooms, asparagus, zucchini, carrots, broccoli, cauliflower, brussel sprouts, green beans, canned baby corn..etc etc - give it all a good coat with olive oil & any spices/herbs you prefer - s&p, garlic powder, fresh/dried dill or parsley, italian spice...etc etc - mix/shake it all well to cover with everything. - spread out evenly on parchment covered baking sheet & roast in oven for 15mins, with a bit of a stir about half way through. The Zuk boys had a great hunting season! Sawyer, Garrett & Jas are very avid whitetail hunters, & man, they sure put the time in to get these ones. Sawyer harvested his nice four pointer on the last day of rifle shortly before dark. ... And Garrett got his buck in muzzleloader on the Saturday morning before rifle opened. Jason? Well, he got skunked ...maybe a bit too fussy?? The boys & Jas headed out many mornings before school & afternoons after school & on weekends to take in the season. And Garrett has his route of trail cams he has been checking and maintaining since the end of August. So Healthy ~ Beef Bone Broth Beef bone broth is the base of so many kinds of soups, gravies, stews & sauces. It adds so much flavour to meals. And it has so many healthy benefits.... It has become hugely popular in natural health as a beverage due to it’s nutrient denseness digestive health, reduces inflammation, collagen restoration, etc etc are some of the benefits As well, we have a few customers that have incorporated it into their Keto diet due to it’s high protein percentage So easy to make, just needs a bit of time. Here is how it goes down in the Bar Z kitchen : roast soup bones & choice of veggies (I use carrots, onions, celery & fresh garlic) for 1 hour at 350, let cool transfer to slow cooker add water to near full add extra spices/herbs - salt & pepper, & I’ve used basil & dill & parsley at different times, just personal preference cook on low for minimum 8 hours, preferably 12 strain meat & veggies from liquid That’s it. Done. From there you can keep in fridge for a few days. I often freeze mine in ice cube trays as they are super handy to pull out when I am cooking. Or else I just make a full on pot of delish homemade hearty beef soup with all the fixin’s. Not the F word! Yep....Fundraising!! Bar Z Beef would be interested to help with that. ... It is that time of year...school, hockey, skating, dance, committee restarts, etc etc (albeit a very different year due to Covid). As our family has always been involved in all different activities we know exactly what that looks like. We all try to figure out different ways to keep our teams, organizations, clubs, etc afloat and that is where fundraising so often comes into play. We did have an opportunity to work with a community group earlier this summer in it’s fundraising goals to put a new floor in their community hall. Bar Z Bovine - Pasture Edition #2 It’s been a long time since both boys & I did the round about tour of checking pastures yesterday...& yes, Hank too. .....Heck ya!...com’n out!! Last week, when one of our very good friends, Genni, asked to stop by with her friend, Amy and her kids to see our cows & horses ...the answer was an easy YES. Seriously.... These two kids- wow! Emily and Brady are so inquisitive, smart, little spitfires & just too dang cute! Cannot wait to have them out again, especially next spring during calving season. This is exactly one piece we love filling in with consumers. Both of these families are Bar Z Beef customers, & neither one are strangers to ranch/farm life. They getthe filthy ranch pick-up, cows just not quite willing to come for a pat, flies buzzing, grasshoppers in the face, watching crickets scamper all over(...lol, all within 30mins..) Grilled Short Ribs Short Ribs are one of our more most talked about cuts for a couple of reasons... - hands down one of the most frequent question we get has to be is how to prepare short ribs. - ribs are either a cut our customers absolutely love or mehhhh not so much... Full on disclosure, Jason, Garrett & Sawyer absolutely love them & I am on the mehhhh not so much side...ya, I know right?!..but I do give them a try every time.. Our take on summer time short ribs is very simple: -Sprinkle your favorite seasoning - we keep it simple - salt, pepper, garlic powder (lots) & rosemary on all sides of the ribs -Next, place the ribs in the slow cooker on low for 7 - 8 hours. -And finally throw them on the grill for a bit of bbq flavour, using your fav sauce, for only a few minutes on each side. Bar Z Beefers These are some of our animals we are raising and will be part of our Bar Z Beef program this fall & winter They have been on pasture eating grass since the end of May... We have begun pulling a handful of the larger ones off our pasture & started them on grain to begin the finishing part of our program that we do all at our ranch Once we are satisfied they have been on feed long enough, minimum 100 days, to marble (the great taste/flavour of beef) we will then be taking them in to be processed They will be aged 21 days in the cooler & then cut into all things beef. Then our beef will be off to our customers. This Fella Hank is hands down the sweetest blue heeler in history. Ya, we may be biased, but who isn’t when it comes to their canine family members? ~... Hank is now just over 3.5 years old & the most loyal doggo. Whether we leave for an hour or three days, he greets us as if he’s been waiting his lifetime for us...his tail wagging & grunting his great happiness to see us. ~ And if there is a truck ride to be taken, darn tootin’ he’s the first one waiting at the truck’s door to get in. ~ Does he work cows? Yep. Pretty relentless, his slow/no button is sometimes lost & then things can get a bit tricky. ~ He is always 110% in, never any doubt. Yep, you soooo know it! ~~~~~~~~Ranchero Beef & Eggs~~~~~~~~ We’ve had the opportunity to get out camping a couple of times over the past 2 weeks, with some really great friends....& learned of this easy, tasty little breakie recipe from our good friends Brenda & Curtis on one of our excursions... Protein packed Taco seasoned Bar Z ground beef placed in individual pockets, warmed up, & welled out. Place an egg in the centre & then cook it to desired wellness. A dash of S&P. A sprinkle of favorite cheese. Done Sooooo delish! Could definitely add a splash of salsa, a spoonful of guacamole, a dash of hot sauce or cayenne pepper...endless possibilities. The three boys of Bar Z ranch...roping, riding, laughing & maybe even a bit of cussing on a Sunday afternoon a couple of weeks ago Over fifteen years ago Jason built an outside roping arena.....so many good times & man, the stories it could tell. Garrett & Sawyer learned how to rope & ride in that arena at a very young age, all with Jas’s guidance. ... They started with a roping dummy pulled by a side by side & then worked up to heading & heeling our long horns Hands down, one of the best investments we’ve made. >Our boys have had achievements in a sport that they enjoy. >They have developed responsibility from caring for their horses. >They have learned some business ideals as horse owners. >And also, Garrett & Sawyer formed so many friendships, as we all have, participating in Ranch Rodeos for over a decade Carry that forward to the work they can do on the ranch and elsewhere with these life skills & tools - truly no price can be put on any of it And now look at them..taller, sassier & as gritty as their dad.
