I feel so loved! Not one but two people know me so well that they pre-ordered the #ohsheglowsfordinner cookbook for me! (Shout out to Monica and my Dad ). I haven't read through every recipe yet but I had to dive in and start cooking. This warm potato salad with asparagus and lentils was amazing! Very hearty and full of flavor. Excited to cook my way through this new book and add a few more plant-based recipes to my routine.

It's World Mental Health Day! There is still stigma around seeking help for mental health related struggles and it leads to self-medicating in sometimes very harmful ways. Although there is still stigma and it can take a lot of courage to reach out for help, taking steps to make our mental health the best it can be is a huge gift we can give ourselves and our loved ones. Let's start prioritizing our mental health as much as we do our physical well-being! Connecting with friends and spending time outside are two huge components of how I care for my own mental health. 3 Ways to Improve Your Mood... Without trying too hard ;) 1. Have a novel experience. Walk a different route, try a new recipe, or switch up your coffee order. Variety truly is the spice of life! 2. Use all your senses. When was the last time you stopped and checked in with all sight, sound, taste, touch AND smell? Open the tin of cinnamon in your cupboard and take a whiff. Look at the cloud formations. ... 3. Learn something. Bonus points if it is something about yourself. Download a podcast like @selfhelplesspodcast or @thejoyjunkie, check out a travel video on YouTube, or ask a friend how they created something.

For those who need it (aka ME) - this is your reminder to focus on progress, not perfection. Start before you are ready. Take one step even if you can't see where the staircase leads. For me, this meant getting outside even though I didn't have the ideal outfit on for it, hair was def unwashed, forgot my sunnies, water bottle was leaking, and I couldn't figure out how to download the talk I wanted to listen to.... but I made myself go anyways. And it was the best part of my whole day. With health - physical or mental - perfectionism can be a real killjoy. Take a tiny action in the right direction and you will feel better for it!

When your sister grows spaghetti squash as delicious as mine does, this meal is a special summer treat! Tonight we had spaghetti squash with a homemade pasta sauce, parmasean and fresh basil on top. How do you cook your squash? I cut the squash in two so it would fit in the crock pot and cooked it on high for 2.5 hrs. Once it's cooked, all you have to do is scoop out the seeds and separate the rind. It's super easy and much more time efficient than trying to peel it befo...re it's cooked! If you love fast and easy weeknight meals, give this a like and a share!
