Glazed Cinnamon Rolls. These are by far the best cinnamon rolls that I've made so far and I make then on a regular. The softness is on a whole different level and it has become a favorite with the kids and doesn't last more than two days. Very addictive to say the least especially when it's nice and hot.
Iced Gems. These little guys took me straight back to my childhood when my Nana (grandfather) would go to Georgetown and I always looked forward to the treat that he would bring back. I don't know if anyone has had it before but, traditionally it's a little biscuit with a royal icing on top. I remember taking off the icing and leaving it for later while I finished the biscuits. My recreation is a flaky butter biscuit with a meringue on top. Less sweet but still delicious.
Jamaican Brown Stew Fish with Carrots. In Guyana we say Stew Fish but Jamaicans say it's Brown Stew Fish. From what I can remember in Guyana we cook stew fish with tomato paste which gives it a reddish color. On the other hand, Jamaicans make it with browning sauce which gives it a dark brown color depending on how much of it you use but the cooking method is basically the same.
Vanilla cupcakes with Vanilla bean Swiss Meringue Buttercream. A basic vanilla cupcake, straight forward and simple recipe with a smooth and silky buttercream. If you like the really sweet and sugary frosting then this isn't for you.
Steamed Snapper and Vegetables. Not a lot of people like ochro because of the slime. I only used to eat it fried until about five years ago when I had it with steam fish. It's really good. In this dish it can be substituted with other vegetables but this is how I prefer it. You can have it with white rice, rice and peas or just like that. Jamaicans tend to have it with crackers.
