Curry Turkey and Pomegranate Supper...........yummy we all loved this easy supper 1 tsp extra virgin cocunut oil 1 butternut squash, peeled, seeded and and put... in oven to bake red onion, chopped 2 cloves of garlic, chopped 1 lb extra lean ground turkey 1 can of coconut milk tsp cayenne pepper tsp ground ginger 2 tbsp curry cup frozen peas, defrosted (I didnt have any) 2 tbsp raisins, chopped up (Optional didnt put in) cup pomegranate seeds Big handful of cilantro Heat extra v c oil in pan, Saute onions until brown add spices. remove from pan and add turkey and cook for 5 mins on medium heat. Add back in onions and mix with meat. Add salt and pepper to taste. Next add cocunut milk and bring to the boil then simmer for 10mins with lid on the pan. Cook untiul turkey is cooked then lastly cube the butternut squash, add peas and raisins and cilantro. Serve with a scattering of pomegranate seeds. I served with sauted kale and quinoa This is a simple health supper which will give you close to 30g of protein My kids loved it so much they said can we have it again tomorrow night. If you are a vegetarian you could replace the turkey with chickpeas, or white beans.
