White Picket Fence After a brief hiatus, our ol' faithful Blended Foeder Saison is back! For those of you who’ve fostered (or killed) a sourdough starter at some point in the bread-frenzied pandemic, understanding our approach to fermenting WPF will be a breeze.... On a regular basis we pull a partial amount of aged saison from the oak foeders, and then top them up with fresh saison to age further. At the same time, we create a blend with aged and fresh saison to package. The old and new unite, the resident yeast and bacteria populations welcome the fresh stuff into the fold, and a long lineage of beers can be created from the same microflora. WPF is a little bretty, a little acidic, with complementary notes of lemon meringue -- and a nice bit of Bellwoods history in each bottle.

Announcing the REDUX Collab Series! As we round the corner on the weekend that would have been our fourth annual Witchstock Festival, we pause that journey to make way for a new (more distance-friendly) creative project. REDUX is a new series where we’ll revisit a curated selection of beers we’ve brewed in collaboration before -- highlighting some favourites from the past few years, and in many cases, recreating these styles at Bellwoods for the first time.... In a moment when personal radii is very limited, and beer festivals are off the table, we’re tapping into the teleportational powers of good beer to bridge physical distance. Curious about what to expect from Redux? The first breweries we’re re-collaborating with include The Veil Brewing Co., Trillium Brewing Company, Evil Twin Brewing & J.
