Bespoke Baking

On Sunday it was my birthday, which was kind of a new baby, sleep deprived after thought to me - I kept forgetting. It's really hard, when you're a baker, to choose what you want as your own birthday cake! I often go for a cookies and cream...or completely skip cake and choose my favourite fruit sorbet instead. This year, I requested my least favourite cake to make, Nigella Lawson's Lemon Meringue Cake..it haunts me...but it's so light, zingy and delicious. It is also incred...ibly messy, fussy and tends to be a bit ugly... This cake is made up of two layers of the thinnest bit of lemon sponge with meringue sandwiching lemon curd and whipping cream. It is a beautiful, messy thing....kind of like life with a newborn.

Happy International Women's Day! There are so so many bad ass women in business in Squamish...so many fantastic examples leading the way! It is a pleasure to work alongside so many. I have an even bigger respect for the mamas in business now that I've got my own wee guy!... Many hugs and high fives all around today.

A fun thing that has been happening lately is that I've been getting requests for cake from repeat offenders just because they really wanted another cake - not because they had a particular celebration in mind. I had a craving yesterday afternoon for giant pumpkin muffins. Tis the season...I'm letting my basic white girl colours shine through. But really, I know I've told you all before but baking muffins brings me great joy. These babies are moist but have the perfect crumb. They aren't too sweet and they have a perfect little sprinkling of cinnamon sugar baked on top for a satisfying crunch. And look at my Texas muffin tin, that thing is seasoned to perfection. Covid really did a number on the wedding industry, of which I am a small part, this year. I'm happy to say that 2 out of the 3 weddings I was booked for were able to happen and I had a surprise elopement, so in my books, love is still winning the day. Baker Field Trip! Today we finally made it to Willow View Farms! We walked through the orchard, fawned over some goats and got our hands on some tasty looking apples. Adam demonstrates the sheer size of the Jonagolds! We also bought fresh apple cider as well as some delicious apple cider slushies. And I got some pumpkins. I love Fall!... You see cakes all of the time, but did you know that my favourite things to bake are muffins? There are limitless possibilities to muffins in terms of flavour combinations and how nutritious or decadent you want them to be. In this case, these are Whole Wheat Coconut Pineapple muffins which could very easily be made gluten free and/or vegan with easy substitutions. This cake....was massive. Pictures just don't do justice. It was 10" across and three layers high... Two layers of chocolate with a layer of vanilla sandwiched between. Dark chocolate buttercream and white chocolate ganache in between each layer and on the outside. Decadence.......
