We're saying good night and good luck to our 2021 trailer season tonight at 7pm (or when supplies run out). Saucy pulled pork, brisket, chicken fingers, a couple orders of Buffalo Cauliflower, mac and cheese, mac and cheese bites, and most of our sauces are still on our limited menu today while supplies last - come join us in the sunshine on green square this afternoon before we get ready to hibernate and focus on our 2022 catering schedule and menu planning!

Today was an absolutely beautiful fall day, and we were so thrilled to welcome back many friends of the truck as well as new visitors. As we got everything shut down for the day, we made the decision that its time to winterize the trailer and say goodbye for the winter. Ending it on such a great high note is a treat. We'll be on @hintonsgreensquare tomorrow, but with a reduced menu based on supplies on hand, between 3-7pm. We'll also be putting together a couple of special ...items in the next couple of days that will help keep your freezer stocked with some of that smoked meat goodness - stay tuned for more on that in the coming weeks, as well as details on apparel sales, gift cards, and catering bookings for next year. Thanks to everyone that helped make our first (very short) year special. We're so grateful to you all.

As we start looking at the end of our first season, we're so grateful for everyone that's come out, that's shared feedback, and that have supported us over the last couple of months. We can't wait to be back next year, with all of your favourite snacks like our one of a kind smoked garlic salt hand cut fries, or our hand breaded fried mac and cheese bites. If you can't make it through the winter without one more buffalo cauliflower or pulled pork sandwich, come see us this weekend at @hintonsgreensquare - we're not sure how much longer we'll be able to set up!

We're learning lots about our trailer lately... like this morning, when we learnt about the temperature range of our grey water valve. While we're still expecting to be on Green Square this morning, on time or close to it, we are currently re-evaluating how long the trailer will be running this fall. TLDR: If you want to get in your smoked meat and chicken finger fix, do it soon... our season is quickly coming to a close!

Let's do lunch. With yesterday's circuit failure on our proofer, we're only going to be able to keep one shoulder and one brisket per day - which will mean we will probably need to close earlier in the evening than 7pm, when we run out. And with the cold weather, we may need to cancel scheduled days due to road or temperature. ... But with that all said - The pulled pork sandwich was a favourite of our customers at shutdown, so we made it a menu item to stay. And it's been flying out the window today! We're at @hintonsgreensquare today thru Saturday 11-7, closed between 2-3, and Sunday 3-7, or supplies run out!
