Cured Guanciale, Pork Jowl Pancetta House Cured Guanciale a type of cured bacon made from pork cheeks is finally ready. $45/kg individual pieces run from $12.50 to $25.00 Intense, porky flavour, a must for Spaghetti Carbonara and Bucatini all'Amatriciana never mind Mac 'n Cheese, Sautéed Mushrooms, Pasta A la Vongole and the most amazing BLTs you have ever tasted (ok GLTs) Most are traditional, cured in Salt, Sugar, BC Garlic, Anise, Rosemary, Thyme and Red Pepper Flakes, I s...moked a few of them and also did 3 in a Japanese Cure, with Kombu Kelp Salt & Sugar. The barest minimum amount Prague Powder was used. All are vacuum packed and cool cupboard shelf sable. Refrigerate after opening. Slice thin and cook very slowly, the sweetness in the cure does burn more easily than regular bacon. For Pick-up only in Whistler. See more

UMAMI CRISP - From Okinawa to Whister by Big Smoke BBQ Packed in jars, $10 for 110ml - $15 for 190ml great value! In Japan it is called: Taberyu Ryu An Umami Flavour Bomb In-You-Mouth. Not as spicy as the Chinese version.... Made with milder Guajillo & New Mexico Chilies, crispy fried Garlic and Shallots, Foraged Wild Mushroom Powder, Ginger, Sesame Seeds, Peanuts and much more!Taberu Ryu is the Japanese version of the Chinese Chilli Crisp Oil condiment which has been found to be too spicy, plus the strong 5 Spice Dried Shrimp flavours are too forward. We discovered the Japanese version originally from Okinawa, milder in heat, more forward with crispy garlic and shallots, peanuts, sesame and ginger. We developed a recipe with lots of Kombu, Ao Ko, Wild Mushroom and Sea Salt. It's a thick, Peanut and Sesame Oil based paste, crunchy with all the goodies.For pick up in Whistler only.
